This Slow Cooker Beef Minestrone Soup is full of protein, and vegetables. It’s made in the slow cooker which makes for perfect meal for a busy weeknight.

How do I make this Slow Cooker Beef Minestrone Soup?

Spray a skillet pan with nonstick cooking spray. Add ground beef. Cook until the meat is no longer pink.In a crock pot, combine cooked ground beef/turkey, vegetable or beef broth, water, tomato sauce, tomatoes, kidney beans, green beans, onion, celery, carrots, garlic, oregano, salt, and pepper in a crockpot.

Cook on low for 6 to 8 hours.

Bring a large pot of water to a boil. Cook shell pasta or macaroni according to package. Drain.

Add spinach and cooked pasta shells or macaroni into crockpot; cook for an additional 15 minutes.

Serve warm.

  • 16 oz. 96% lean ground beef or 99% ground turkey
  • 2 (15 oz) can kidney beans, drained
  • 3 cloves garlic, minced
  • 4 cups low sodium vegetable or beef broth (  I use Swanson’s reduced sodium beef broth
  • 1 (15 oz) can tomato sauce
  • 1 (14.5 oz) can green beans
  • 1 cup water
  • 1/2 cup diced carrots
  • 1/3 cup diced celery
  • 1/4 cup diced yellow onion
  • 1 (14 1/2 oz) can diced tomatoes
  • 6 oz. dry Barilla whole grain pasta shells 
  • 1 cup fresh spinach, torn
  • 1 tsp dried oregano
  • Salt and Pepper, to taste

Directions:

  1. Spray a skillet pan with nonstick cooking spray. Add ground beef. Cook until the meat is no longer pink.
