What ingredients do I need to make this Slow Cooker Beef Minestrone Soup?
- 96% lean ground beef or 99% ground turkey
- Kidney beans, drained
- 3 cloves garlic, minced
- Low sodium vegetable or beef broth ( I use Swanson’s reduced sodium beef broth)
- Tomato sauce
- Green beans
- Diced carrots
- Diced celery
- Diced yellow onion
- Diced tomatoes
- Barilla whole grain pasta shells
- Fresh spinach, torn
- Dried oregano
- Salt and Pepper, to taste
How do I make this Slow Cooker Beef Minestrone Soup?
Spray a skillet pan with nonstick cooking spray. Add ground beef. Cook until the meat is no longer pink.In a crock pot, combine cooked ground beef/turkey, vegetable or beef broth, water, tomato sauce, tomatoes, kidney beans, green beans, onion, celery, carrots, garlic, oregano, salt, and pepper in a crockpot.
Cook on low for 6 to 8 hours.
Bring a large pot of water to a boil. Cook shell pasta or macaroni according to package. Drain.
Add spinach and cooked pasta shells or macaroni into crockpot; cook for an additional 15 minutes.
Serve warm.
