Chicken Parmesan Bake

There are thousands of Chicken Parmesan recipes in this world-but this particular recipe is my favorite. It’s filled with diced cooked chicken, two kinds of cheeses, a homemade marinara sauce, and topped with flavorful breadcrumbs-the best part is-this dish takes only a few minutes to make!

What Ingredients do I need for this Chicken Parmesan Bake?

  • Chicken: What is so great about this dish-is that you can use that leftover chicken you have in your fridge. It can be rotisserie, grilled, or baked chicken skinless, boneless chicken breasts. I usually use Tyson’s pre-cooked, grilled skinless, boneless chicken tenders. Just dice or shred and place the chicken bite size pieces at the bottom of the casserole dish. 
  • Cheese: I use two kinds of cheese in this Chicken Parmesan Bake. Grated Parmesan and Shredded Mozzarella.
  • Marinara Sauce:  I love to cook a large batch of my Zero Point Marinara Sauce and freeze it for meals like this. For this recipe I like a thicker sauce-and therefore recommend leaving out the water so it has a THICK consistency.  My Zero Point Marinara Sauce gives this dish flavor and keeps it low in points. You could also use jarred store bought pasta sauce. The one that I love and use when I don’t have my homemade sauce on hand is Prego No Sugar Added Pasta Sauce. It’s lower in points and tastes great!
  • Bread Crumbs: The Italian style breadcrumbs mixed with a little bit of melted light butter gives this bake a nice flavorful crunchy topping. You can also use Panko breadcrumbs mixed with 1 tsp Italian seasonings, and a dash of salt and pepper or Progresso Italian style bread crumbs.

 

How do I make this Chicken Parmesan Bake?

Preheat oven to 350 degrees. Spray a 8 x 8 casserole dish with non stick cooking spray.

Place cooked chicken at the bottom of prepared dish in one single layer. 

Spread marinara sauce over the top of the chicken.

Sprinkle the Parmesan and Mozzarella cheese evenly over the top of the marinara sauce.

In a small bowl mix together Panko breadcrumbs, Italian seasonings, salt and pepper or Progresso Italian Style Breadcrumbs

Pour melted butter into the breadcrumbs. Stir until well combined. 

Sprinkle over the top of the casserole. 

Bake for 20-25 minutes or until bubbly. Remove from oven. 

Serve over 1 1/2 cups of cooked Carba Nada Fettuccine Noddles or whole grain pasta, if you have that as a zero point food item.

This dish can be pre-made and frozen. To do that: Assemble casserole as directed. Do not bake. Freeze in air tight container. When ready to eat, thaw overnight in the fridge and cook as directed. You may need to add 5-10 minutes to the baking time.

Ingredients

  • 4 cups cooked skinless, boneless chicken, diced ( I usually use Tyson's pre-cooked, grilled skinless, boneless chicken tenders)
  • 1/2 cup Parmesan cheese
  • 3 cups Zero Point Marinara Sauce ( omit the water from the recipe-to keep the sauce thick) or Prego no sugar added traditional pasta sauce
  • 1/2 cup light mozzarella ( I use Market Pantry from Target)
  • 1/2 cup Progresso Italian Style bread crumbs or 1 tsp of Italian Seasonings and Panko bread crumbs
  • salt and pepper, to taste
  • 1 Tbsp Land o' Lakes light butter made with canola oil, melted
  • 10 oz. cooked Carba Nada fettuccine Noddles or whole wheat pasta, optional

Instructions

    1. Preheat oven to 350 degrees. Spray a 8 x 8 casserole dish with non stick cooking spray.
    2. Place cooked chicken at the bottom of prepared dish in one single layer. 
    3. Spread marinara sauce over the top of the chicken.
    4. Sprinkle the Parmesan and Mozzarella cheese evenly over the top of the marinara sauce.
    5. In a small bowl mix together Panko breadcrumbs, Italian seasonings, dash of salt and pepper or Progresso Italian Style Breadcrumbs.

Very tasty! This is the first well plated recipe that I have tried and I’m glad I did. Will be trying more recipes in the near future. Excellent taste, loved the ease of making this recipe and family loved it! Definitely a keeper!

I have a question. Is this supposed to be a low carb recipe? I ask because you recommended the Carba Nada fettuccine Noodles. Or is this just for weight loss?

No. It's more for weight watchers. I recommend the carbs nada fettuccine noddles because they are lower points than most noodles.

I cannot tell you how much we love this recipe!!!! It’s so flavorful and easy to make. I used the Italian bread crumbs but still added the Italian seasoning meant for use if using Panko bread crumbs, just wanted to give it a little added zip. I also used Romano cheese instead of Parmesan cheese, again to add a little more zip (no difference in points). This will definitely become part of our weekly menu!! Thanks so much for such a great recipe!!

This sounds wonderful. Just a quick suggestion, if you can find shredded Velveeta it has 2 points for 1/4 cup. (The same for all varieties-original, Mozzarella, Cheddar, Mexican blend, and Pepper Jack) I love the flavor and how it melts into recipes. Side note a Velveeta slice has 1 point for eggs salads or sandwiches. I find the most reasonable priced Velveeta shreds or slices is Walmart. Has been $2 or 8 oz bag of shreds.
