What ingredients do I use for this Easy Cheesy Broccoli and Cauliflower Bake?

  • Tostitos Smooth Cheesy Dip: This dip is surprising low in points-in fact-it’s only 6 smartpoints for a full cup or 1 smartpoint for 2 Tbsp.
  • Broccoli and Cauliflower:  I recommend using fresh broccoli and cauliflower.  If you use frozen broccoli and cauliflower you will want to remove the extra moisture from wet vegetables before cooking. If you don’t want to end up with a swimming pool at the bottom of your dish-you will want to thaw them in a strainer so they lose their extra liquid. 
  • Panko Plain Bread Crumbs: These give the casserole a little crunch. I like to mix them with a little melted butter to help them turn golden and get even crispier. 
  • Land O’ Lakes light butter made with canola oil: I use this to mix the Panko Bread Crumbs in. It makes the bread crumbs turn nice and golden brown.
  • Smoked Paprika:  made from peppers that are smoked and dried over oak fires. This process gives the red powder a rich, smoky flavor-which really adds great flavor to this cheesy bake.

Can you easily substitute smoked paprika for paprika?

Yes,  but it is not a perfect substitution by any means. The huge smoky flavor of smoked paprika really adds a nice smoky flavor to this cheesy side dish vs. the sweet paprika, which doesn’t have a strong enough flavor. You could substitute the smoked paprika substitution for chipotle powder which has a similar smoky flavor with a lot more heat.

How do you make this Easy Cheesy Broccoli and Cauliflower Bake?

Preheat over to 450 degrees.

Heat Tostitos cheese dip in a microwave-safe container for 30-40 seconds or until cheese melts.

Whisk in the oregano, basil, smoked paprika, salt and pepper until well combined.

Spray a 9×13 baking dish with non stick cooking spray. Arrange broccoli and cauliflower in a single layer into baking dish.

Pour cheese sauce on top of vegetables, making sure all pieces are coated in cheese sauce.

Melt butter and combine the butter with the Panko bread crumbs. Mix until well combined.

Pour Panko bread crumbs over the top of the broccoli and cauliflower.

Cover with foil. Bake for 20 minutes then remove foil.

Bake for another 10 minutes or until bread crumbs are golden brown and the cauliflower and broccoli are fork tender.

This dish made it into our regular rotation. I changed the plain tostitos dip to Herr's Salsa Con Queso (2 tbsp: 25 cal, 1.5 g fat, 0 sat fat, 0 sugar, 0 carbs), added a jalapeno, chili powder, onion powder, and some cajun seasoning. Lost the breadcrumbs and instead after 25 min, I sprinkle chopped bell pepper because my son wanted some more crunch.

Hello! I was excited to see the recipe because I love veggies and cheese. How do you come up with 6 points for a cup of cheese sauce? I cannot make that calculate on my weight watcher app. I come up with 12 points per cup. Please help me out! I appreciate it!

Hi Cecilia,

If you do a search for “Tostitos Cheese Dip” it will pull up-and it’s already defaults to 1 cup. And it reads 6 points. Or if you change it to 2 tbsp. It shows 1 point.

Here’s the nutritional info for 2 Tbsp on the cheese as well:

Calories:40 Protein:0 Sugar 0 Saturated Fat: 1
