This creamy Cauliflower Risotto is perfect as a side dish. The combination of the cheeses, bacon and seasonings really compliment each other.

Servings: Makes 1 serving

GREEN: 3 Smartpoints for serving

BLUE: 3 Smartpoints for serving

PURPLE: 3 Smartpoints for serving

 

This creamy Cauliflower Risotto would be a prefect side dish to any of these delicious dishes:

Creamy Parmesan Chicken 

Bacon and Swiss Chicken or Pork Chops

Hasselback Jalapeno Popper Chicken 

Lightened Up Chicken Marsala

 

Ingredients:

  • 1 1/2 cups rice cauliflower, frozen or fresh
  • 1/2 tsp of everything but the bagel seasoning ( I use Dak’s everything but salt)
  • Dash of dry rosemary, dash of garlic powder
  • 1 garlic and herb laughing cow cheese wedge
  • 3 Tbsp light mozzarella ( I use Pantry Market light Mozzarella)
  • 1 Tbsp fat free sour cream or nonfat plain yogurt
  • 1 slice center cut bacon, cooked and crumbled

 

Directions:

  1. Combine frozen riced cauliflower, seasonings, and cheese wedge in a microwaveable bowl.
  2. Cook in microwave for 2-3 minutes until cheese wedge is soft.
  3. Stir in mozzarella, bacon pieces, fat free sour cream.
  4. Cook for an additional 1-2 minutes.

Cauliflower Risotto

This creamy Cauliflower Risotto is perfect as a side dish. The combination of the cheeses, bacon and seasonings really compliment each other.

Cook Time 5 minutes
Total Time 10 minutes

Ingredients

  • 1 1/2 cups rice cauliflower, frozen or fresh

    Amazing! I’ve been dying to try this recipe and now I’m wondering why it took so long. Everything you make or buy I jump on the bandwagon because if it comes with your approval, I know its delish and you don’t disappoint. You’ve made WW so much easier for me and I’m down 44lbs. Yum and thank you.

    I made this for my family as a side and they LOVED it. I’m picky with how I use cauliflower rice but this is a definite go-to now. Even my sister-in-law loved it and she hates cauliflower.
