These Churro Pancakes are everything you want in a pancake- fluffy, soft, super easy to make, and topped with cinnamon sugar.

Servings: Makes 9 pancakes

GREEN: 1 SmartPoint each or 4 SmartPoints for 3 pancakes

BLUE: 1 SmartPoint per pancake 

PURPLE: 1 SmartPoint per pancake 

These Churro Pancakes are prefect for breakfast, brunch, dinner, or even as a snack. They can be freeze well.

The key to making these pancakes nice and fluffy is beating 2 eggs whites together.

 Did you know that egg white when beaten really well-create a foam like texture? That is what makes these pancakes thick and fluffy.

Therefore this is a critical step to ensure the pancakes turn out thick and fluffy.

 until they are are nice and foamy or when you have formed “soft peaks”

“Soft Peaks” is the stage you want when you’re simply adding whipped egg whites to a dish to lighten it and to add extra fluffy, light-as-air results.

In a separate mixing bowl combine the remaining ingredients.

Whisk until all ingredients are incorporated.

Gently fold in the soft peaks/egg whites. 

Spray a non stick skillet with non stick cooking spray and heat on medium high.

Using a 1/4 measuring cup, scoop pancake batter onto prepared skillet, making 4 inch pancakes.

Cook pancakes on medium high until little bubbles start to form at the top of the pancakes.

About 2 minutes. Flip and cook for an additional 2 minutes or until lightly golden.

Sprinkle the top and bottoms with cinnamon sugar substitute.

Can these be made with all purpose flour instead of self rising flour?

Yes, you bet! Just add 1 tsp baking powder along with 1/4 tsp salt to the 2/3 cup all purpose flour. 

How do freeze these Churro Pancakes?

Place a sheet of parchment or wax paper between each pancake and stack together.  Place pancakes inside an air tight container or heavy-duty freezer bag.

Freeze for up to 1 to 2 months for best quality.

 

Ingredients:

  • 2/3 cup Gold Medal self rising flour
  • 1 cup nonfat yogurt plain or Greek yogurt
  • 1/8 tsp vanilla extract
  • 1/4 cup water
  • 1 egg
  • 2 egg whites
  • 1 Tbsp brown sugar substitute ( I use Lakanto Golden Monkfruit Sweetener) 
  • 1/2 Tbsp ground cinnamon 

Topping Ingredients: 

  • 3 Tbsp granulated sugar substitute  ( I use Lakanto Classic Monkfruit Sweetener) 
  • 1 Tbsp ground cinnamon 

Directions:

  1. In a large mixing bowl combine, 2 egg whites and using a hand mixer, beat until nice and foamy until they are are nice and foamy or when you have formed “soft peaks.”
  2. In a separate mixing bowl combine the remaining ingredients. Whisk until all ingredients are incorporated.
  3. Gently fold in the soft peaks/egg whites. 
  4. Spray a non stick skillet or griddle with non stick cooking spray and heat skillet on medium high.
  5. Using a 1/4 measuring cup, scoop pancake batter onto prepared skillet, making 4 inch pancakes.
  6. Cook pancakes on medium high until little bubbles start to form at the top of the pancakes. About 2-4 minutes. Flip and cook for an additional 2-4 minutes or until lightly golden.
  7. In a small mixing bowl combine, cinnamon and white granulated sugar substitute. Mix until until well combined. Sprinkle cinnamon sugar over the top and bottom of each pancake.
  8. Enjoy!
  9. Serve pancakes with your favorite toppings such as: sugar free Mrs. Butterworth’s syrup, fat free Reddi Whip and or sugar free caramel ice cream sauce.

Notes:

  1. The point value may differ depending on the brand of self rising flour you use. The Gold Medal brand has less points than most self rising flours and does make these pancakes lower in points. 
  2. I recommend using a canola oil base non stick cooking spray. I have noticed that the pancakes will stick sometimes to cooking oils such as coconut oil or sunflower oil.
  3. In order to calculate the smart points on a recipe you have to enter the ingredients in manually (by ingredient) not by the nutritional information in the ww recipe builder-since this recipe contains zero point items the app doesn’t realize there is zero point items in the recipe and will calculate it based only off the nutritional info which is not accurate.
  4. UPDATE:

  • The WW app occasionally makes updates and will round up point values- these pancakes used to be 3 Smartpoints for 2 pancakes on the blue and purple plan..however as of 4/27/2020 the ww app rounds the point value up and they are 1 Smartpoint per pancake on the blue and purple plan.

    I made these but they seemed salty to me? Did I do something wrong?

      Hi Yaniz,

      It could have been the self rising flour that was used. Some brands carry more sodium than others which can have a salty taste. If you prefer, you can use all purpose flour and just add 1/2 tsp of baking powder to help make them rise.

          Yes, I do use the Gold Medal…definitely give the all purpose one a try, that and adding pure vanilla extract can also help off set the salt taste that you might be tasting.

      Monkfruit sweetener is natural sweetener that is 0 points and Trivia is a brand of stevia that is also natural but usually isn’t 0 sp. Be sure to check the brand that is used to ensure that it is 0sp.

      yes, these can be made with almond flour or whole wheat flour. You will want to add 1 tsp of baking powder.

    These look delicious! When you say beat the egg whites till foamy does that mean stiff like for a meringue or just foamy? I can’t wait to try these, they look fantastic! Love your recipes!

      I recommend beating until it creates “Soft peaks” or “foamy” (this is when you can remove the whisk or beaters and a peak will form, and then droop).

      Soft peak is the stage you usually want when you’re simply adding whipped egg whites to a dish to lighten it and to add extra fluffy, light-as-air results.

      Yes, you bet-stevia in the raw would work as a substiute for the monkftuit -keep in mind-that is more concentrated and therefore you’ll want to use the conversion for real sugar that is located on back of the package so its not overly sweetened.
