What ingredients do I need to make this Cilantro Lime Cauliflower Rice?
This Cilantro Lime Cauliflower Rice is so easy to make and only requires four ingredients!
- 1 large head of cauliflower
- 2 garlic cloves, minced
- 1 bunch cilantro, finely chopped
- fresh lime juice from 2 small limes
You’ll need a food processor or blender, as well. I LOVE my Ninja Mega Kitchen Blender/Food Processor. I bought mine on Amazon and it’s has been one of my most favorite kitchen gadgets I own! How do I make this Cilantro Lime Cauliflower Rice?
Remove the leaves from the head of cauliflower.
Cut the cauliflower in half. Cut the core off of the cauliflower.
Place half the cauliflower florets into a food processor or blender
and blend or pulse until it’s into small bits.
Remove the riced cauliflower from the processor and place into a large skillet pan.
Add minced garlic to the riced cauliflower.
Cook over medium heat for about 5 minutes, stirring constantly.
Just before removing from heat add finely chopped cilantro. Stir until well combined.
using a manual hand juicer or your hands squeeze the lime juice over the top of the riced cauliflower.
Toss until well combined.
Garnish with fresh limes and cilantro.

- You can substitute the head of cauliflower for fresh prepackaged riced cauliflower or frozen riced cauliflower. If using frozen riced cauliflower let it thaw out completely, then pat dry with a paper towel to get most of the water out-before adding to the skillet to prevent sogginess.

So you cook the cauliflower in a dry skillet, no spray or oil?

Hi Lisa,
I cook mine in a nonstick skillet-and the cauliflower has enough moisture so it won’t stick-but if you wanted-you can spray you pan with some non stick cooking spray. It doesn’t need oil.
