Coconut Shrimp

These Coconut Shrimp are so easy this is to make, and much cheaper and tastier than any restaurant!

Servings: Makes 12 Shrimp

GREEN: 4 SmartPoints for 6 shrimp if using liquid egg substitute or 5 SmartPoints for 6 shrimp if using a whole egg

BLUE:  3 SmartPoints for 6 shrimp

PURPLE: 3 SmartPoints for 6 shrimp

 

Coconut Shrimp is usually prepared using coconut milk, deep fried, and full of fat and calories.

This recipe is a lighter version, made with panko bread crumbs, an egg, sweetened coconut flakes, and air fried.

 

What baking dish do I use for these coconut shrimp?

I use the 4-inch baking dish that came with my Simple Living air fryer.

What if I don’t have an air fryer?

If you don’t have an air fryer these shrimp can also be cooked in a non stick large skillet.

Spray the skillet with non stick cooking spray ( with canola oil) cook over medium high heat for 3-5 minutes on each side or until crispy!

These shrimp can also be cooked in the oven.  Place the shrimp on a baking sheet that has been sprayed with non stick cooking spray and in a single layer. Bake at 425 degrees for 8-10 minutes. 

Ingredients:

  • 12 extra large raw shrimp -I use frozen shrimp, peeled and deveined with tails attached and thaw them out and remove tails
  • 2 Tbsp sweetened coconut flakes
  • 1/2 tsp seasoned salt
  • 1/4 cup panko bread crumbs
  • 1 egg or 1/4 cup liquid egg substitute 

Directions:

  1. In a shallow plate mix together the panko bread crumbs, coconut flakes, and salt.
  2. In another shallow bowl add egg. Beat egg with wire whisk.
  3. Dip shrimp (thawed, no tail on) into egg mixture. Then coat shrimp in panko/coconut mixture.
  4. Places the coated shrimp into air fryer.
  5. Cook at 390 degrees for 8-10 minutes or until they are crispy.
