These Zero Point Teriyaki Chicken Skewers are a classic summertime meal. They can easily be made on an outdoor grill or baked right in your oven. The nice thing about this recipe is that you can plan a head and deseed and dice the veggies the day before. Just store in a large air tight container in the fridge until ready to use. 

These Zero Point Teriyaki Chicken Skewers are so versatile. They can easily be adjusted to fit each person’s taste can using a variety of vegetables or fruit such as:

green peppers

yellow peppers

orange peppers

mushrooms

zucchini squash 

red or yellow onions

cherry tomatoes

pineapple chunks

 

 

You can use medal or wooden skewers. I prefer the medal ones that can be found on Amazon here. If you do use wooden skewers be sure to soak them in cold water for at least 20 minutes to keep them from burning. They do have a tendency to burn or catch on fire when cooking them on the grill. Soaking the skewers in cold water will help prevent that from happening.

 

Ingredients:

  • 2 lb. skinless, boneless chicken tenders or breasts ( cut into 1 1/2 inch pieces)
  • 6 Tbsp G. Hughes Sugar Free Teriyaki Marinade 
  • 1/2 Tbsp minced garlic
  • 10 mushrooms (sliced into pieces)
  • 1 red pepper (cut and deseeded and cut into 1 inch pieces)
  • 1 yellow pepper (cut and deseeded and cut into 1 inch pieces)
  • 1 medium sweet onion (sliced into quarters and into pieces)
  • 10 wooden or metal skewers
  • any other vegetables or fruit that you prefer 

 

Directions:

  1. In a mixing bowl add teriyaki sauce and minced garlic. Place chicken pieces into bowl and evenly coat chicken pieces. Cover the bowl with plastic wrap; marinate in the refrigerator for at least 2 hours or overnight.
  2. Soak wooden skewers ( if you are using wooden ones) in water for about 30 minutes before use.( This will ensure the wooden skewers don’t burn on the grill)
  3. Remove the chicken from the marinade. Discard the remaining marinade.
  4. Place pieces of the marinated chicken with pieces of peppers, onion, and mushrooms onto the skewers.
  5. Cook the skewers on the preheated grill, turning occasionally until they are brown on all sides, and the chicken is no longer pink in the center or in the oven at 400 degrees for 20-25 minutes.

Servings: Makes 10 skewers

    Notes

    1. Since 1/2 of the marinate gets discarded I counted 2 Tbsp for the entire batch of skewers. Feel free to adjust the points accordingly
