Copycat Chili’s Southwest Egg Rolls

These Copycat Chili’s Southwest Egg Rolls taste just like the Southwest egg roll appetizer that is served at Chili’s restaurants! These egg rolls are packed with skinless boneless diced chicken, black beans, corn, cheese and southwest seasonings all wrapped up into egg roll wrappers. These make for a great Super Bowl appetizer recipe!

Is it even worth watching the Super Bowl without the delicious party food? I think not. I love football but I do think the food is just as important as the football game. I love making lightened up copycat recipes that taste just as good-if not better-than my favorite restaurant dishes! And one of my favorite appetizers from Chili’s is their Southwest Egg Rolls dipped in that flavorful avocado ranch dip!

You can save the fat, calories, WW points, and clean-up by preparing these Southwestern egg rolls right at home in the air fryer or oven rather than the traditional deep fried ones. These are my favorite cooked in the air fryer since the air fryer requires NO oil!

 These Copycat Chili’s Southwest Egg Rolls are seriously the best served with my homemade lightened up avocado ranch dip- and they make for a delicious dinner, lunch, snack, or game day appetizer!

What ingredients do I need to make these Copycat Chili’s Southwest Egg Rolls?

  • Red bell pepper-diced
  • Frozen corn-thawed 
  • Black beans- drained and rinsed
  • Green onions- sliced
  • Pickled jalapeños- chopped
  • Reduced fat cheese-shredded 
  • Cooked skinless, boneless chicken-shredded, diced, or cubed 
  • Paprika 
  • Salt 
  • Black pepper 
  • Chili powder
  • Cumin
  • Onion powder 
  • Garlic powder
  • Egg-mixed with 1 tbsp water for egg wash
  • Egg roll wrappers

Avocado Ranch Ingredients: ( optional) 

  • Skinny ranch dressing or any light ranch dressing – Click HERE for skinny ranch dressing recipe.
  • Smashed avocado or 100 calorie mini guacamole cup

Whisk ingredients together until well combined.

How do I make these Copycat Chili’s Southwest Egg Rolls?

In a large mixing bowl, combine the bell pepper, corn, black beans, pickled jalapeños, green onions,, cheese and salt and pepper, cumin, and chili powder. Mix until well combined.

Season cooked chicken with paprika, salt and pepper. 

Fold seasoned chicken into the bean and corn mixture. Stir until well combined. 

In a small bowl, use a fork to whisk together the egg and water. Set aside.

Scoop 1/3 cup of the chicken mixture onto an egg roll wrapper.

Rolling from the bottom, roll halfway up, then fold in sides and roll tightly. 

Seal with a drop of egg wash then brush the egg rolls with egg wash all around-so both sides of the egg rolls are covered with egg wash. 

Air Fryer Directions:

Place egg rolls in an air fryer basket. Be sure the egg rolls are not touching–cook in batches, if needed.

Cook at 380 degrees for 5 minutes. 

Flip the egg rolls and continue cooking for 3-5 more minutes or until the egg roll wrappers are golden brown and crispy.  

Cooking times can vary depending on the brand and size of your air fryer. (I have an 8 quart Ari fryer and I cook six at a time at 380 degrees and it takes roughly 8-10 minutes total.)

Serve warm with skinny avocado ranch dip, if desired.

For the Skinny Avocado Ranch Dip (optional) 

  • 1 cup skinny ranch dressing or any light ranch dressing 
  • 3 oz. smashed avocado or 100 calorie mini guacamole cup
