Creamy Chicken and Rice Casserole

 

A Creamy Chicken Casserole is always a great idea! This Creamy Chicken Casserole Recipe is filled with creamy chicken, rice, and peas. It’s a comfort food that the entire family will love!

Servings: Makes 6 (1 cup) servings

 GREEN: 6 SmartPoints per serving if using white rice and zero point veggie or 7 SmartPoints if using brown rice and peas

BLUE: 5 Smartpoints per serving if using white rice or 6 SmartPoints if using brown rice

PURPLE: 2 SmartPoints per serving if using brown rice or 5 SmartPoints if using white rice

 

Ingredients:

  • 3 (4 oz.) raw, boneless, skinless chicken breasts, diced
  • 1 cup uncooked long grain white rice or brown rice 
  • 2 (10 1/2 oz.) cans Healthy Request cream of mushroom or chicken soup (undiluted). (I use cream of mushroom.)
  • 1 package dry onion soup mix
  • 1/2 cup water
  • 1/2 cup nonfat plain yogurt
  • 1 tsp salt
  • 1 tsp pepper
  • 2 cups frozen peas or a veggie of your choice: asparagus, broccoli, mushrooms or corn.

Directions:

  1. Preheat oven to 350 degrees.
  2. Spray a 9×13 baking dish with non stick cooking spray. Place chicken in baking dish.
  3. Combine remaining ingredients (except for peas) in a bowl and mix until combined.
  4. Spread mixture over chicken. Cover with aluminum foil.
  5. Bake for 1 hour. Remove foil. Stir in peas and bake for another 15 minutes.
  6. Remove from oven. Allow to cool for 15-20 minutes to allow rice to soak up additional liquids.

Hi, could you substitute cauliflower rice for this? Would it change the point value?

Yes, if you were to use Cauliflower Rice it would alter the points.

It would be 2 SmartPoints for the BLUE AND PURPLE PLAN-3 Smartpoints per serving for the GREEN plan.

Hi Suzette, the way the points are calculated is based off the ingredients used and importing the ingredients into the recipe builder on the WW app and updating the serving size. I have added the nutritional info as well..it's at the bottom of the recipe card. However, please note the nutritional info was not used to calculate the WW points. The reason for this-there 0 point foods that are included in the recipe that don't need to be counted but are included in the nutritional info.

I have made this recipe for years and my family loves it. The one difference is you cut the chicken breasts into pieces. My recipes calls for leaving them whole but then the rice underneath sometimes comes out not done enough because it did n't have any sauce on it.

Hi, did you use nonfat greek yogurt or plain nonfat or would it make a difference also if I used 98% fat free cream of mushroom would it change the smart points, would using brown rice change cooking time and points?

I used nonfat Greek yogurt, but either one of them would work. IF you substituted it for the 98% fat free mushroom it increases the overall points by 5. Brown Rice higher in points depending on the brand used. You would want to check the points on the packaging. The cooking time would be the same as the white rice. Thank you
