Creamy Italian Chicken

This Creamy Italian Chicken is one of those dishes that the entire family will enjoy! Serve as is-with your favorite veggie-or on top of a low-point pasta for a complete meal.

What Ingredients do I need to make this Creamy Italian Chicken:

  • Frozen or fresh boneless skinless chicken breasts or tenders 
  • Water
  • Minced garlic
  • Dry Italian dressing mix -I use Good Seasons Italian Salad Dressing & Recipe Mix )
  • Salt
  • Black pepper
  • Reduced fat cream cheese– I use the 1/3 less fat cream cheese. Be sure to have it at room temperature before adding it. 
  • Healthy Request cream of chicken soup
  • Fresh or dry parsley-for garnish

 

What do I serve this Italian Chicken with?

You can serve this dish plain, over rice, whole wheat noodles, or along side your favorite vegetable.

I love this dish over Al Dente Carba-Nada Egg Fettuccine. This egg fettuccine pasta is 4 smartpoints for 1  and 1/2 cups and tastes amazing.

How do I make this Creamy Italian Chicken?

Slow Cooker Directions:

Cook noodles as directed on back of the package and set aside. 

Meanwhile, place chicken breasts at the bottom of the slow cooker.

Add water, cream of chicken soup, Italian seasoning, garlic, salt and black pepper.

Cook on low for 4-6 hours or 3 hours on high. Turn slow cooker off.

Shred chicken using two forks.

Whisk in cream cheese and continue whisking until cream cheese has dissolved.

Serve over low point noodles

whole wheat noodles, or rice.

Instant Pot Directions:

  1. If using noodles, cook noodles as directed on back of the package and set aside. 
  2. Meanwhile, add water and the chicken breasts/tenders to the bottom of the Instant Pot. 
  3. Add water, cream of chicken soup, Italian seasoning, garlic, salt and black pepper.
  4. Place lid on the Instant Pot and turn valve to sealing. Select high pressure and set the timer to 8 minutes. The pressure cooker will take about 10 minutes to build pressure. 
  5. Once it’s over, turn the Instant Pot off and let pressure release naturally for 5 minutes and then open the lid.
  6. Shred chicken using two forks. Keep liquid and chicken in Instant Pot.
  7. Turn the Instant Pot to sauté. 
  8. Whisk in cream cheese and continue whisking until cream cheese has dissolved.
  9. Garnish with a pinch of fresh or dry parsley.

Ingredients

  • 1 lb. frozen or fresh boneless skinless chicken breasts or tenders
  • 1/2 cup water
  • 1 tsp minced garlic
  • 1 (.7 oz. ) packet of dry Italian dressing mix ( I use Good Season's  )
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 4 oz. 1/3 less fat cream cheese ( room temperature) 
  • 1 ( 10.5 oz.) Healthy Request cream of chicken soup, not diluted.
  • Pinch of fresh or dry parsley, for garnish

Made this tonight! My hubby and I loved it! Had about a pound and a half of chicken, but the liquid worked well still. I went to find my cream cheese to find it expired . Subbed 3 wedges of garlic and herb laughing cow and a splash of fat free half and half. Served with broccoli and egg noodles

I made this last night for dinner for my son and me. It was my first time using my instant pot. It was absolutely delicious!! The only thing I changed up was I added some sautéed mushrooms I had in the fridge. It was super easy to make. The only thing I might do differently next time is reduce the cook time. I couldn’t believe how few FS points these were. Because I am a good mother I let my son have the leftovers but these will be on the menu again very soon. Thank you for this recipe!!!
