What ciabatta rolls do I use for this sandwich?
I get the ciabatta rolls from Trader Joes.
Here’s a picture of the ciabatta rolls.
Trader Joe’s sells two different ones.
Small ones for 3 points-they are 115 calories, 57 grams, 0 fat and 4 grams of protein.
Or the bigger ones for 5 points-they are 180 calories, 1 gram of fat, 6 grams of protein.
Tip: The small ones are challenging to find at times- so if you unable to find the small ones-you can use the 5 point ones and cut them open and remove some of the inside of the ciabatta roll-using a food scale-measure the ciabatta until it reaches 57 grams which is the same measurement for the 3 point ones.
I use Trader Joe’s jarred Pesto all Genovese mixed with light Kraft Mayo for the creamy pesto sauce. This pesto sauce is 2 points per 1 Tbsp.
Ingredients:
- 1 ( 4 oz.) boneless, skinless, chicken thinly sliced chicken breast
- Season with your favorite chicken seasoning like paprika, garlic powder, seasoned salt ect. (I use Daks original red seasoning.)
- 1 Tbsp pesto sauce ( I use Trader Joe’s Pesto alla Genovese)
- 1 Tbsp light mayonnaise ( I use light Kraft mayonnaise)
- slices of red onion
- 1 ciabatta roll ( I use Trader Joe’s 3 or 5 point ciabatta roll)
Directions:
- Season and grill chicken breast in a cast iron grill or outdoor grill. (I use this cast iron grill)
- Grill chicken until it’s no longer pink.
- Slice ciabatta rolls and place in toaster.
- In a small mixing bowl combine pesto and mayo. Stir until both ingredients have been incorporated.
- Spread pesto mayo on toasted ciabatta and add onion and grilled chicken
Servings: Makes 1 sandwich

The next time you pick up the Ciabatta Rolls at TJ’s, can you please insert a picture? I’ve been searching high and low for these 4sp rolls and I just can’t locate them. Perhaps if I have a picture to take with me, they will know what I’m looking for? I can only hope. Thank you. Making this over the weekend and will use 2sp hamburger rolls that I’ll toast.
What a gorgeous sandwich. Can’t wait to give it a try
