Crispy Cajun Shrimp Tacos

These Cajun Shrimp Tacos are loaded with flavor-made with cajun shrimp and a drizzle of homemade chipotle mayo sauce .

 

How do I make these Cajun Shrimp Tacos?

Preheat oven to 400 degrees.

 In a shallow plate mix together the panko bread crumbs,Cajun voodoo seasoning,

 powder, and salt and pepper.

In another small bowl add eggs. Beat eggs with wire whisk until combined.

Dip shrimp (thawed, no tail on) into egg mixture. Then coat shrimp in panko mixturePlaces the coated shrimp onto a lined with parchment paper baking sheet
Bake in the oven for about 15-30 minutes or until they are golden.
Or you can cook them in an air fryer at 390 degrees for 6-9 minutes (checking them halfway in between) I use this Simple Living air fryer.

Spray the front and back of each corn tortilla and cook on a lightly sprayed with non stick cooking spray skillet for 30-60 seconds on each side.

Repeat for the remaining corn tortillas. 

Add 3 shrimp, cabbage, cilantro and squeeze of lime juice on top of warm tortilla.

Drizzle remaining sauce evenly on top.

Ingredients:

  • 9 extra large cocktail shrimp (I use frozen pre-peeled and cooked, and I thaw them out and remove tails)
  • dash of salt and pepper
  • 1/2 tsp of Dak’s Cajun voodoo seasoning or any Cajun seasoning
  • 1/2 tsp garlic powder
  • 1/4 cup panko bread crumbs
  • 1 egg
  • 3 corn tortillas( I use thin mission corn tortillas )
  • 1/2 cup cabbage
  • 1 lime cut in wedges

Sauce Ingredients:

  • 1/2 cup non fat plain yogurt
  • 3 Tbsp Light Kraft Mayo
  • Lime juice from 1 lime
  • 1/2 tsp sriracha
  • 1/4 tsp cumin
  • 1/4 tsp salt
  • 1/2 tsp garlic powder 

 

Directions:

  6. Spray the front and back of each corn tortilla and cook on a lightly sprayed with non stick cooking spray skillet for 1-2 minutes on each side.
  7. Repeat for the remaining corn tortillas.
  8. Add 3 shrimp, cabbage, cilantro and squeeze of lime juice on top of warm tortilla.

Servings: Makes 3 Tacos

GREEN: 4 Smartpoints per taco 

BLUE and PURPLE: 1 Taco for 2 Smartpoints or 2 for 5 Smart points

Notes:

You can add your favorite salsa on top. I love them with my zero point mango salsa.

As you are using pre-cooked shrimp, I was wondering if the shrimp get tough/rubbery after you bake them? Have you ever tried this with raw shrimp? I love shrimp/fish taco's...oh heck, I love ANY taco!! I look forward to trying these.

Good Morning,

Yes, I make these with precooked shrimp-but I haven’t noticed the shrimp having a rubbery texture when making these.

Also-I haven’t tried making them with raw shrimp but that would definitely work. You’ll need to increase the cooking time to ensure the shrimp gets cooked through.
