Crockpot Classic Chicken Noodle Soup

 

A classic soup!! You can’t go wrong with this Crockpot Classic Chicken Noodle soup. A favorite that everyone will enjoy!

Makes 8 (1 and 1/2 cups) servings

Ingredients:

  • 2 Tbsp land o’lakes light butter made with Canola oil
  • 10 cups fat free, low sodium, chicken broth
  • 4 celery ribs, chopped
  • 4 medium carrots, chopped
  • 2 bay leaves
  • 1/4 teaspoon dried or fresh thyme
  • 2 cups skinless, boneless  shredded, chicken breasts ( rotisserie chicken without the skin and dark meat works), cooked
  • 1/2 tsp salt
  • 1 large onion, chopped
  • 1 garlic clove, minced
  • 1 tsp dried parsley
  • 8 oz. uncooked Carba Nada Fettuccine noodles or whole grain noodles if you have whole grain noodles as a zero point food.
  • Salt and Pepper, to taste

Directions:

  1. In a skillet melt light butter, and add onion, carrots, and celery. Cook on medium heat until tender. Set aside.
  2. In a crock pot combine, chicken broth, thyme, veggies, chicken, parsley garlic, salt, pepper and bay leaves.
  3. Cook on low for 2 hours.
  4. Add the Carba Nada Fettuccine noodles 15 minutes before serving.
  5. Remove bay leaves and enjoy!
