This Easy Chickpea Salad is packed with chickpeas, fresh vegetables and drizzled with a simple homemade vinaigrette dressing. It’s a great side dish to any meal! This Easy Chickpea Salad is naturally gluten-free, healthy, and vegan!

Summertime is all about fresh salads-and this Easy Chickpea Salad is healthy and packed with protein, fresh veggies- making for a great salad for meal prepping a summer lunch or dinner!

This salad is great protein source-made with chickpeas- and perfect for potlucks, summer cookouts, picnics and barbecues!

What ingredients do I need to make this Easy Chickpea Salad?

  • Chickpeas- canned. Drained and rinsed.
  • English cucumber-diced
  • Red onion-diced
  • Red bell pepper-chopped
  • Orange bell pepper or yellow bell pepper-chopped
  • Green bell pepper -chopped
  • Grape tomatoes– halved 
  • Crumbled fat free feta-optional garnish. I like to use Athenos Tradtional fat free feta.
  • Chopped parsley-optional garnish 

Dressing Ingredients:

  • Extra-virgin olive oil
  • Red wine vinegar
  • Garlic cloves-minced 
  • Dried oregano
  • Kosher salt
  • Black pepper

Place all salad ingredients ( except for the feta cheese and parsley) into a large bowl.

Toss to combine.

In a small mixing bowl or large measuring cup, whisk together the dressing ingredients: olive oil, red wine vinegar, garlic, oregano, salt and pepper.

Pour the dressing over the top. Toss to combine.

Let it marinate in the refrigerator for at least 30 minutes. When ready to eat, garnish with feta cheese and fresh chopped parsley, if desired.

Store any leftovers in an airtight container in the fridge for up to 3-5 days.

  • 1 medium orange bell pepper and/or yellow bell pepper, chopped
  • 1 medium green bell pepper, chopped
  • 1 cup grape tomatoes, halved 
  • 1/4 cup crumbled Athenos Tradtional fat free feta, optional garnish
  • 1/4 cup finely chopped parsley-garnish 

Dressing Ingredients:

  • 2 Tbsp extra-virgin olive oil
  • 3 Tbsp red wine vinegar
  • 2 garlic cloves, minced 
  • 1 1/2 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Directions:

  1. Place all salad ingredients ( except for the feta cheese and parsley) into a large bowl. Toss to combine.
  2. In a small mixing bowl or large measuring cup, stir together the dressing ingredients: olive oil, red wine vinegar, garlic, oregano, salt and pepper.
