These cookies are simple to make, and you’ll have ZERO guilt when eating them because they are much healthier than traditional cookies. These cookies are naturally sweetened with honey, purple vanilla extract and overly ripe bananas! These aren’t filled with refined sugars or flour-making them perfect for a healthy snack, treat, or on-the-go breakfast!

What ingredients do I need to make these Easy Healthy Breakfast Cookies?

  • Overly ripe bananas-mashed. The riper the bananas are the more sweetness the cookies will be. 
  • Light butter-melted. I like use Land O’Lakes light butter made with canola oil
  • Egg- room temperature 
  • Honey– used for sweetness and as a binding agent.
  • Pure vanilla extract– for sweetness.
  • Old fashioned rolled oats– you could use gluten free
  • Cinnamon – for flavor.
  • Chia seeds – thickens the batter and helps holds the shape of the cookies. Chia seeds adds fiber, omega 3, and are packed with protein.

How do I make these Easy Healthy Breakfast Cookies?

Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Set aside. 

In large mixing bowl mash bananas until smooth.

Whisk in melted light butter, egg, pure vanilla, honey and mix until combined.

Add remaining ingredients except for chocolate chips. Mix until well combined.

Fold in no sugar added chocolate chips and let the batter sit for 5 minutes (the chia seeds will thicken the batter)

Scoop about 1 tablespoon of batter and form into shape of a cookie. 

Make sure to shape the cookies the way you would like them-because these cookies do not have leavening agent or flour, so they do not rise or expand.

The cookies will stay whatever shape you bake them at.

Bake at 350 for 10-15 minutes, or until cookies are a light brown on the edges.

Allow cookies to cool and enjoy!

Store leftovers in an airtight container in refrigerator for up to a week or freeze for up to two months.
