Fiesta Corn Salad


Looking for a great summer salad to take to those family BBQ’s or gatherings?! Here is one I definitely recommend! The combination of the corn, chili seasoning, lime juice along with the creaminess of the yogurt really makes this salad delicious.

Makes 5 (1 cup) servings

What ingredients do I need to make this Fiesta Corn Salad?

  • Frozen or fresh corn-thawed if using frozen, or you can use fire roasted frozen corn kernels, or canned corn
  • Black beans– canned, rinsed, and drained
  • Red pepper– diced
  • Red onion- diced
  • Nonfat Greek yogurt-used as base for the dressing 
  • Chili powder-to taste
  • Salt/pepper- to taste
  • Lime juice- from 1 lime

Optional Add In’s:

  • Reduced fat-pepper jack cheese– shredded or grated 
  • Avocado-diced 

How do I make this Fiesta Corn Salad?

In a large mixing bowl combine thawed corn, drained black beans, diced red peppers, and onions.

Mix together.

Add chili powder, salt, pepper and lime juice.

Fold in the non fat Greek or plain yogurt until all ingredients have been incorporated.

Cover and refrigerate for at least 20 minutes.

When you are ready to serve add avocado & pepper jack cheese, if desire.

What could I add in if I can't tolerate beans?
