What Ingredients do I make these Greek Chicken Meatballs?

  • 99% lean ground chicken
  • Plain or Italian breadcrumbs
  • Crumbled fat free feta cheese-if you’re not a feta cheese fan- you could substitute it for parmigiano-reggiano or for a dairy free option-omit the cheese all together.
  • Egg
  • Lemon zest from 1/2 lemon
  • 2 cloves garlic- minced 
  • Salt
  • Dried oregano
  • Dried dill-or 1 Tbsp fresh, finely chopped
  • Onion powder
  • Dried parsley-or 2 Tbsp fresh, finely chopped

What can I serve with Greek Meatballs?

I love these served with an easy tomato salad using diced tomato, diced cucumber, diced red onion, dash of olive oil, a dash of balsamic vinegar, salt and pepper. 

You can serve them over a bed of rice, wrapped up in a pita with tzatziki sauce, on a salad.

Do I have to use breadcrumbs?! Can I make them low carb?

The breadcrumbs are used to bind the chicken together. Without some sort of binder, they may not hold their shape. You could substitute the breadcrumbs for Panko, all purpose flour, almond flour, or crushed pork rinds, if desired.

How long do these meatballs stay fresh for? Can I freeze them?

Store these in an airtight container in the fridge for up to 3 days or you can freeze the leftovers for up to two months.

How do I make these Greek Chicken Meatballs?

In a large mixing bowl, combine the ground chicken, breadcrumbs, egg, parmesan or fat free feta cheese, lemon zest, garlic, salt, onion powder, oregano, dill, and fresh parsley.

Mix all together using your hands.
Using your hands, gently form into golf ball-sized meatballs-about 1 Tbsp. 

Preheat the oven to 400° degrees.

Line a baking sheet with parchment paper, or spray a baking dish with nonstick cooking spray.

Place meatball on prepared baking sheet. Spray the tops of the meatballs with cooking spray. 

Bake meatballs for 18-20 minutes or until they are lightly browned.

  6. Meanwhile, prepare tzatziki Sauce: In small bowl, stir together all ingredients.
  7. Garnish meatballs with fresh parsley and serve with tzatziki sauce.

Zero Point Tzatziki Sauce Recipe:
1 cup nonfat plain Greek yogurt
1 Tbsp lemon juice
1 garlic clove or 1/2 tsp minced garlic
1 English cucumber-the long, skinny ones
1 tsp salt
1 tsp fresh or dry dill

Directions:
In a bowl combine, non fat plain Greek yogurt, lemon juice, garlic clove or minced garlic, salt, and dill.
Using a hand grater, grate English cucumber onto a plate. After cucumber is grated, lightly squeeze the grated cucumber between your palms over the sink or garbage to remove excess liquid.
Then transfer the squeezed cucumber to the yogurt mixture. Stir until all ingredients have been incorporated.
Refrigerate for at least 30 minutes before serving.

Made these for dinner tonight, they were a hit! I made a cucumber and tomato salad to do with them and used store bought tzatziki sauce. So good!
