Lemon Poke Cake

This Lemon Poke Cake is so moist and full of flavor. This cake comes together quickly using a box cake mix and pudding mix!

Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl combine cake mix, unsweetened applesauce, eggs, lemon juice, zest and water.
  3. Pour batter into a lightly sprayed with cooking spray 9×11 pan.
  4. Cook for 22 minutes.
  5. While it’s cooling, in a mixing bowl combine pudding mix and skim milk.
  6. Whisk together until it thickens.
  7. Using the end of a mixing spoon, poke the cake with holes through the entire cake. Pour pudding mixture onto cake.
  8. Refrigerator for 2 hours and then add cool whip and fruit.

  • 1 box Pillsbury sugar-free yellow cake mix.
  • 1/3 cup unsweetened apple sauce.
  • 2 eggs or 4 egg whites
  • 1 cup water
  • 1 Tbsp fresh lemon juice and a bit of lemon zest
  • 1 small (1 oz) package of sugar-free lemon flavor pudding mix
  • 1 cup skim milk
  • 6 oz fat-free cool whip
  • fruit of your choice ( strawberries, blueberries, raspberries)

I'm assuming yes, but does the lemon juice and zest go into the cake batter? Also, is there a measurement for the extract? Thanks! We love lemon and I'd love to make this for my husband.

My apologizes. I had edited the recipe from extract to fresh lemon juice and forgot to edit the directions. I have now done so. In place of the extract you can use fresh lemon juice and zest. If you don't have a fresh lemon,,,you use 1/2 tbsp of lemon extract. Thank you!
