Light and Easy Stuffing Casserole

This Light and Easy Stuffing Casserole is pure comfort food! It’s made with simple ingredients and can be made ahead of time for a family gathering or a Holiday Party!

Makes 10 (3/4) servings

How do I make this Light and Easy Stuffing Casserole? 

Spay a skillet with non stick cooking spray.

Add diced onion, celery, poultry seasoning and 1 Tbsp water. 

Pour chicken broth overtop until stuffing mix add enough to moisten the stuffing (but not soggy) and gently mix until incorporated.

Spray a 9 x 13 baking dish with non stick cooking spray.

Spread mixture in bottom of prepared baking dish. Pour melted butter over the top of stuffing and cover with foil.

Makes 12 (3/4 cup) servings

Ingredients:

  • 1 yellow onion, diced
  • 4 stalks celery, diced
  • 2 Tbsp Land o’ Lakes light butter made with canola oil 
  • 1 1/2 tsp poultry seasoning
  • 1/4 tsp pepper
  • 1/2 tsp salt to taste
  • 2 (6 oz.) boxes Stove Top stuffing mix made for turkey or chicken, unprepared
  • 3 cups chicken broth
  • 1 Tbsp fresh rosemary or 2 tsp dried
  • 1 Tbsp fresh sage or 2 tsp dried
  • 1 Tbsp fresh thyme or 2 tsp dried

Directions:

  • Preheat oven to 350 degrees.
  • Spay a skillet with non stick cooking spray. Add diced onion, celery, poultry seasoning and 1 Tbsp water.  Cook until vegetables are tender or for about 10-12 minutes.
  • Place stuffing mix in a large bowl. Add onion mixture, salt, pepper, rosemary, sage and thyme herbs. 
  • Pour chicken broth overtop until stuffing mix add enough to moisten the stuffing (but not soggy) and gently mix until incorporated. (You may not need all of the broth)
  • Spray a 9 x 13 baking dish with non stick cooking spray. Spread mixture in bottom of prepared baking dish. Pour melted butter over the top of stuffing and cover with foil.
  • Bake for 25 minutes, then uncover and bake an additional 10 minutes.

Could you use the herb seasoned cubed stuffing in place of the Stove top (that's what I have in the house )?

I'm confused about the serving size/number of servings. It says yields 6 but makes 12 3/4 cup servings.

It serves 12. It should read yields 12. Each serving is 3/4 cup
