Loaded Mashed Cauliflower

This Loaded Mashed Cauliflower is great alternative to Mashed Potatoes-it’s a perfect low point side dish for Thanksgiving or as a companion to any meal!

Makes 6 ( 1/2 cup) servings

What ingredients do I need to make this Loaded Mashed Cauliflower?

I use Birds Eye frozen riced cauliflower. You can use another brand-just be sure the ingredients are just cauliflower

I love this Hormel fully cooked bacon Black Label bacon from Sam’s club. You can have 2 slices for 1 Freestyle Smart points or 4 slices for 3 slices 

I use Land o’ Lake light butter for all of my baking recipes. I have found that it has the lowest points and it tastes amazing! You can find it at most grocery stores next to the butter. It comes in a tub-with a green lid. Be sure that it says light butter-they sell one that is regular that is made with canola oil as well-so be sure to check that it says light.

Spray a small baking dish with non stick cooking spray. Place cauliflower mixture into baking dish and add onions, cheese and bacon crumbles on top.

Ingredients:

  • 2 ( 10 oz.) frozen riced cauliflower 
  • 3 oz. light cheddar cheese ( I use Velvetta shreds or  Trader Joe’s lite 3 cheese blend)
  • 1/2 cup nonfat Greek yogurt
  • 4 slices center cut bacon, cooked, crumbled
  • 1 Tbsp Land O’ Lakes light butter made with canola oil
  • 1/4 tsp onion powder
  • 1/2 tsp salt
  • pinch black pepper
  • 1/4 tsp garlic powder
  • 4 green onions, diced

Directions:

  1. Preheat oven to 350 degrees,
  2. In a microwavable bowl cook riced cauliflower for 4 minutes. Place cooked mashed cauliflower into a food processor or blender. Blend cauliflower for 30 seconds. Add Greek yogurt, butter, onion powder, garlic powder, salt and pepper and blend until smooth.
  3. Microwave the bacon slices for 50 seconds in the microwave. Then crumble into pieces.
  4. Spray a 8-inch pie or baking dish with non stick cooking spray. Place cauliflower mixture into baking dish and add onions, cheese and bacon crumbles on top.
  5. Cook for 8-10 minutes or until cheese is bubbly and melted.
