Can you make Jam without adding pectin?

Traditionally jam or jelly is made with pectin-which helps set and gels the jam or jelly. Jam or jelly made without pectin is a bit softer and looser than jam made with pectin, but adding lemon juice-which is high in pectin helps sets this No Sugar Added Strawberry Jam. The key to thickening this jam is to slow boil I- which drives the moisture out of the fruit, helping to preserve and thicken it at the same time. It may take 15-20 minutes to get the jam to the right consistency.

Is lemon juice required?

Yes, lemon juice is naturally high in pectin which helps thickens and sets the jam. The acids from the lemon juice not only helps with the gelling the jam, it also prevents the growth of bacteria. This way, you can easily keep it in the fridge for up to 10 days.

What happens if the jam isn’t thick?

If the jam isn’t as thick as you’d like you can add 1 1/2 teaspoons of cornstarch to the simmering jam. Mix well and boil, stirring constantly for about 4-5 minutes.

How do I make this No Sugar Added Strawberry Jam?

Place berries in a blender or food processor and blend until desired consistency.

Blend thoroughly for smoother jam. If you want a thicker, chunky jam pulse a few times or use a potato masher to mash berries.

Place blended strawberries into a sauce pan and add sweetener.

Bring to a simmer, stirring well, and reduce heat to medium low.
Pour in lemon juice and continue cooking until it has thickened. It can take about 15-20 minutes.

Remove berries from heat and stir until well combined.

Transfer to mason jar and allow to set either on the counter or in the fridge for at least 2 hours.

Store in an airtight mason jar or container in the refrigerator for up to 10 days in the fridge or freeze for up to 3 months.

This No Sugar Added Strawberry Jam is the perfect topping for waffles, pancakes, yogurt, oatmeal, toast. It’s also very tasty when you put it into muffin batter!

Great and easy recipe. I did not have a full pound of berries (9oz only), but I halved the recipe except lemon juice and it was a success. Thank you for all f these great WW friendly recipes.
