One pot meals are my favorite because they make for a quick and easy clean up. They’re also perfect for anyone who’s looking to make dinner without much fuss, whether you’re a single person just trying to get through the week or a busy parent with lots on your plate.
This is an easy dinner idea that the whole family will love—and it’s so easy that you’ll feel like you’ve been gifted a magic wand when it comes to getting dinner on the table. It’s made all in one pan, so there are no separate pots and pans to wash! The irresistibly delicious results are what makes this one of my favorite meals ever.
What ingredients do I need to makeOne Pot Tortellini with Italian Turkey Sausage?
- Onion-diced. You can use yellow or white onion.
- Garlic-minced
- Italian turkey or chicken sausage– I like to use either Jennie-O Italian turkey sausage or Isernio’s chicken sausage
- Crushed tomatoes– canned, not drained
- Refrigerated or frozen tortellini-Walmart brand “Great Value” cheese tortellini
- Fat free half & half-adds creaminess to this dish. If you wanted you could use 1/4 cup non fat plain Greek yogurt mixed with 1 Tbsp milk of your choice, as an alternative for the fat free half & half.
- Baby spinach- torn and stems removed
- Grated Parmesan cheese, chopped fresh parsley or basil for garnish
How do I make this One Pot Tortellini with Italian Turkey Sausage?
Spray a large skillet or Dutch oven with non stick cooking spray. Heat over medium heat until hot. Add onion, and continue cooking for 1 minute.
Add garlic and stir for another 2 minutes.
Add Italian turkey or chicken sausage. Stir and crumble the sausage into bite size pieces.
Continue cooking until sausage is browned.
Drain the fat and leave the sausage in the pan.
Stir in crushed tomatoes and tortellini and bring to a simmer.
Cover and simmer until tender, about 5-7 minutes.
Turn off heat and stir in fat free half and half and torn spinach.
Let it sit for 3-5 minutes to allow the spinach to wilt and the sauce to thicken.
Serve warm and garnish with fresh chopped parsley, basil, or Parmesan cheese, if desired.
Store leftovers in an air tight container in the refrigerator for 5-7 days. When ready to reheat, add a splash or two of low sodium chicken broth to help thin out the sauce.

- 1/3 cup fat free half & half
- 3 cups baby spinach, stems removed and torn
- Optional garnish: grated Parmesan cheese, chopped fresh parsley or basil
Directions:

Made this tonight and we loved it! So happy for the leftovers. I know part of it is me but it did take me longer to cook than the directions say (and I prepped the onion and spinach earlier in the day) it is worth the time!
