This Silver Dollar Pancake Board makes for an easy and creative way to serve your favorite pancake breakfast! Perfect for the Holidays or Brunch on a weekend morning!

Makes 20 silver dollar pancakes

What do I need to make this Silver Dollar Pancake Board?

  • Gold Medal self rising flour or Kodiak Cakes Pancake Mix– you could substitute the self-rising flour for Kodiak Cakes Pancake mix for: Krusteaz Protein Pancake Mix, Buttermilk – 100% Whole Grain Flour or King Arthur Gluten-Free Pancake Mix– as a gluten-free option.
  • Unsweetened almond, coconut, skim, or soy milk-for flavor and to thin batter out. I like use unsweetened almond or coconut milk. The unsweetened almond and coconut milk are less in points per cup. 
  • Nonfat plain Greek yogurt or unsweetened applesauce (choose one NOT both) –for creaminess, texture, and thickness 
  • Vanilla extract
  • Egg whites- the egg whites are the secret ingredient in making the pancakes so incredibly fluffy!
  • Egg-one whole egg or you can substitute it for 2 more egg whites or 2 Tbsp liquid egg 
  • Zero Point brown sugar substitute– I use Lakanto Golden Monkfruit Sweetener 
  • Ground cinnamon
  • Blueberries- fresh 
  • Raspberries-fresh
  • Strawberries-fresh
  • Bananas-peeled and sliced 
  • Butter-sliced (optional)
  • Fat free or sugar free cool whip
  • Sugar free syrup- I like Mrs Butterworth’s sugar free and Choczero pecan maple syrup 
  • Sugar free chocolate chips-I LOVE  ChocZero no sugar added milk chocolate chips or Lakanto no sugar added chocolate chips.  These brands are super delicious and have NO bitter aftertaste! If you prefer dark chocolate you can substitute the milk chocolate for Lily’s Dark or Milk Chocolate Chips, Stevia Sweetened, with no added sugar.  You can find those HERE on Amazon.  Note: The overall point value for the bars would be the same for any of these no added sugar chocolate chips.

Silver Dollar Pancake Ingredients: 

  • 1 cup Gold Medal self rising flour or Kodiak Cakes Pancake Mix – spooned and leveled
  • 1 cup unsweetened almond, coconut, skim, or soy milk 
  • 2 Tbsp nonfat plain Greek yogurt or unsweetened applesauce 
  • 1/8 tsp vanilla extract
  • 1 egg- you may substitute it for 2 more egg whites or 2 Tbsp liquid eggs 
  • 2 egg whites
  • 1 Tbsp brown or white sugar substitute ( I use Lakanto Golden or Classic Monkfruit Sweetener
  • 1 tsp ground cinnamon

Directions: 

  1. In a large mixing bowl combine, 2 egg whites and using a hand mixer, beat until nice and foamy until they are are nice and foamy or when you have formed “soft peaks.”
  2. In a separate mixing bowl combine the remaining ingredients. Whisk until all ingredients are JUST incorporated. You don’t want to over-mix the batter -it’s okay if the batter has lumps. 
  3. Gently fold in egg whites. 
  4. Spray a non-stick skillet or griddle with non stick cooking spray and heat skillet on medium high.
  5. Using a tablespoon, scoop pancake batter onto prepared skillet. Make pancakes- the size of a silver dollar. 
  6. Cook pancakes on medium high until little bubbles start to form at the top of the pancakes. About 1-3 minutes. Flip and cook for an additional 1-3 minutes or until lightly golden.
  7. Garnish the board with your favorite pancake toppings, sugar free syrup, and fruit.

    7. Garnish the board with your favorite pancake toppings, sugar free syrup, and fruit.
