Easy Skinny Coleslaw 

This chicken salad is packed with so much goodness. The added pineapple tidbits, diced apples, and grapes makes this salad incredibly delicious.

What ingredients do I need to make this Skinny Chicken Salad?

  • Pineapple Tidbits: the pineapple tidbits adds a bit of sweetness. Be sure to drain the juice, otherwise the point value will be affected. If the pineapple tidbits are drained from the juice, they are Zero WW points.
  • Apples: Gala or Pink Lady apples are perfect for this salad. Gala apples are heart-shaped and have distinctive yellow-orange skin with red striping. It’s crisp, sweet taste can’t be beat, Gala is great in salads.  Pink Lady which is a sweet-tart apple with great versatility. Pink Lady is high acid, high sugar apple with a crisp bite. It’s a bit more tart than sweet and very refreshing
  • Grapes: red grapes are often considered sweeter than green grapes. Adding red grapes to this chicken salad gives this salad some crunch and sweetness. 
  • Celery, Green Onion, Almonds: for added crunch and flavor. 
  • Coleslaw dressing, light Kraft mayo and non fat yogurt:  I use the combination of the three to keep the calories and points low without sacrificing all the creaminess and flavor the coleslaw dressing and light mayo gives. 
  • Dill, Thyme, Onion Powder, and Ginger: gives this salad a little tang, subtle, dry aroma and very slight woody flavor, which goes well with the creaminess of the dressing.

How do I make this Skinny Chicken Salad?

Combine, light mayo, coleslaw dressing, and Greek yogurt into a medium mixing. Stir to combine. Add seasonings and fold in chicken. 

In a separate, large mixing bowl combine, diced celery, green onion, grapes, pineapple tidbits, and diced apples. Combine dressing chicken mixture into fruit and vegetable mixture.

Stir until dressing is evenly coated throughout the salad.

Cover and chill in the fridge for at least 4 hours before serving.

Sprinkle slivered almonds over to the top prior to serving, if desired.

Serve with crackers, on top of a bread, rolls, or in a wrap.  

As a low-carb option, you can serve with celery sticks, apple slices, on top of lettuce.

Ingredients: 

  • 2 ( 12.5 oz.) cans Premium Chunk canned chicken breast, drained or 4 cups rotisserie chicken, cut into bite size pieces
  • 3 green onion, diced
  • 1 cup celery, diced 
  • 2 cups apple, diced – I like to use Gala or Pink Lady apples
  • 1 cup red grapes, halved
  • 1 ( 20 oz.) can pineapple tidbits, drained 
  • 1/2 cup light Kraft Mayo  
  • 3 Tbsp Coleslaw dressing ( I use Kraft Coleslaw dressing)
  • 1/2 cup non fat plain or Greek yogurt 
  • 1 /4 tsp thyme
  • 1/2 tsp dried dill weed
  • 1/2 tsp onion powder
  • pinch of ginger powder
  • 3 Tbsp slivered almonds

Directions:

  1. In a medium mixing bowl combine, light mayo, coleslaw dressing, and Greek yogurt. Stir to combine. Add seasonings and fold in chicken.

Fantastic recipe. It is so easy to make and versatile. It is great on a bed of argula or the new Tik tok sandwich between a green pepper.

Linds would you consider making a light version of Coronation Chicken? It is British chicken salad. My late English mother-in-law( survived the bombing of England during WW2) used chicken , celery, mayo, orange marmalade ( some use mango chutney) curry powder celery onion and cinnamon. It is being served today to the royal family for lunch for the Jubilee celebration. It is a very common dish all over England with many variations. It is served over lettuce, on a sandwich or on jacket(baked) potatoes.

Do you think omitting the coleslaw dressing would effete the taste, I just can't justify the cost for such a small amout that I never use again. I love Hungary girl but, most of her recipes use very small amounts of ingredients they become very expensive and most time wasteful if only two people in your house.
