Lightened Up Italian Pasta Salad

This Lightened Up Italian Pasta Salad is a simple cold pasta salad with a light Italian dressing, turkey pepperoni, fresh vegetables and two different kind of cheeses-Perfect for summer BBQ’s, a large crowd, potlucks!

Makes 12 ( 3/4 cup) servings

What ingredients do I need to make this Lightened Up Italian Pasta Salad?

  • Macaroni pasta, dry ( I like to use Barilla Ditalini Pasta for the macaroni or whole wheat pasta if you have whole grain pasta as a zero point food item
  • Light cheddar cheese sticks, diced into small cubes
  • Turkey pepperoni, diced into quarters 
  • Olives, drained, rinsed, and diced
  • Fat free Italian dressing ( I use Olive Garden’s light Italian dressing) 
  • Dry Italian dressing mix
  • Non fat plain or Greek yogurt 
  • Red pepper, diced
  • Cherry or grape tomatoes, diced in half
  • 3 green scallions, diced 
  • Grated Parmesan cheese, optional
  • Pepperoncini, optional 

How do I make this Lightened Up Italian Pasta Salad?

You will begin by cooking the macaroni according to the package directions; drain and rinse under cold water. 

Place in a large mixing bowl; add fat free or light Italian dressing.

Add diced olives, scallions, turkey pepperoni, Colby cheese, diced red pepper, and grape tomatoes. 

In a small mixing bowl combine, non fat Greek or plain yogurt, and dry Italian dressing mix. Whisk until well incorporated.

Pour yogurt dressing mixture over the pasta mixture. Stir until all ingredients have been well combined.

Cover bowl and chill for 8 hours or best chilled overnight at allow all the flavors to blend. Toss again before serving and sprinkle grated Parmesan cheese over the top.

Garnish with pepperoncini’s, if desired.

  • 6 Pepperoncini, optional

You say Olive Garden's Fat Free Dressing but in the directions you say dry packet of Italian dressing mix. Could you clear that up. Thanks

Hi Irene,

For this recipe you would use 1 dry package of Italian dressing mix along with 8 tbsp. of fat free or light liquid Italian dressing.

Hope that clarifies any confusion.
