What ingredients do I need to make these Skinny Double Chocolate Chip Muffins?

  • Self rising flour or Kodiak Cakes Whole Grain Pancake Mix– the point value is less if you use the Kodiak Pancake Mix
  • Unsweetened cocoa powder
  • Baking sugar substitute or zero point white granulated sugar substitute (I use Lakanto Monkfruit Baking Sweetener
  • Baking powder
  • Baking soda
  • Large eggs or 4 large egg whites
  • Skim or unsweetened almond milk 
  • Vanilla extract
  • Unsweetened applesauce 
  • No sugar added chocolate chips ( I use Lakanto sugarless chocolate chips)

What sweetener and chocolate chips do I use to make these Skinny Double Chocolate Chip Muffins?

These can be made with any zero point white granulated sugar substitute. Keep in mind not all sweeteners are the same..they may vary in sweetness and point values.

How do I make these Skinny Double Chocolate Chip Muffins?

Preheat oven 350 degrees.

Line 18 muffin cups with paper or foil liners.-if you don’t have muffin liners-spray the muffin cups with nonstick cooking spray. Set aside.

In a large mixing bowl, whisk together the flour, cocoa powder, sugar substitute, baking powder, and baking soda. Add 8 Tbsp of no sugar added chocolate chips. Stir to combine.

In a separate mixing bowl whisk together unsweetened almond milk or skim milk. 

Whisk in eggs or egg whites, vanilla extract, and unsweetened applesauce.

Whisk until well combined.

Gradually combine wet mixture into the dry ingredients 

stir until JUST combined. ( Do NOT over mix)

Fill the muffin liners (1/2 full) with batter.

Sprinkle the remaining chocolate chips on top of each muffin.

Bake for 15-17 minutes until center comes out clean when a toothpick is inserted into it.

Made these today and they are great! Thanks so much. I substituted the flour and cocoa with Kodiak Dark Chocolate but I only used 1 and 1/2 cups. Did not add 2/3 cup more. But they turned out great!

Many thanks for this recipe!! Love them. I made 9 large muffins vs 18. My question is I find them a bit dry at room temp. Warming in micro helps. Wondering if I can sub Fage 0% FF yogurt for the SF applesauce? Thinking it will make the muffins more moist. Your thoughts?

These muffins were great and thank you for all the wonderful recipes that you share - you’re helping so many people. One question, do you think it would be good to add peanut butter powder and lessen the cocoa a little? I love peanut butter and chocolate but not good at adjusting recipes

Hi! If you use the Kodiak Chocolate pancake mix, how much would you use seeing as you are loosing the cocoa powder? would you put an extra 2/3 cup to replace the cocoa powder?

Yes, that would work great as a substitute! You won't need to use cocoa powder if you use the chocolate pancake mix.
