Vanilla Cornbread Muffins

These Vanilla Cornbread Muffins are sweet, tasty and easy to make. They make for a great side dish or for a tasty breakfast.

Servings: Makes 12 regular sized muffins

Ingredients:

  • 2/3 cup yellow cornmeal
  • 1 cup self rising flour (I use Gold Medal)
  • 3 Tbsp sugar substitute ( I use Lakanto Classic Monkfruit Sweetener )
  • 1 (1 oz. ) box of dry instant sugar free vanilla pudding
  • 2 Tbsp Land o’ Lakes light butter made with canola oil
  • 1 cup unsweetened almond milk
  • 1 tsp vanilla extract

Directions:

  1. Preheat oven to 375 degrees.
  2. Line a 12 muffin tin, with 12 foil muffin liners
  3. In a large bowl, combine cornmeal, flour, sugar substitute, and pudding mix. Mix well.
  4. Stir in softened butter and extract until crumbly for about 1 min.
  5. Stir in unsweetened almond milk until moistened *Do not over mix*
  6. Scoop into 12 muffin liners.
  7. Cook for 14-16 minutes or until golden brown.

Notes:

  • The Gold Medal brand of self rising flour is 3 points less ( 1 1/2 cup for 16 points) than a generic self rising flour ( 1 1/2 cup for 19 points) which impacts the overall point value. If you use a different brand of self rising flour the point value is 3 Smartpoints per serving.
  • The Lakanto Monkfruit Sweetener (sugar substitute) that is used in this recipe is zero points. Please keep in mind-the point value can vary depending on the brand of sugar substitute you choose to use.  The Lakanto Monkfruit Sweetener also has a 1:1 ratio to real sugar. If you use a different sugar substitute you will want to use the equivalent to real sugar that is recommended on back of the sugar substitute package.

I made the vanilla cornbread muffins and the flavor was excellent. I had some maple extract that I had used for another recipe, so I added a teaspoon of maole extract instead of the teaspoon of vanilla. I do have a question; they did not rise, even though my self rising flour was only purchased a month before. Would adding a beaten egg make them rise and be a little lighter in texture?
