These Peanut Butter Blossoms make for a fantastic lightened up version of a classic Peanut Butter Blossoms. They are soft and chewy and topped with a Hershey Kiss-you just won’t believe these delicious cookies are WW Friendly! These make for the perfect Holiday cookie!

What low point peanut or nut butter do you recommend?

Well, my two favorite whipped peanut butters Jif Whips and Peter Pan 1/3 less fat whipped have both been discontinued-but I have since found a few other brands that I LOVE!

This Better’n Peanut Butter is only 100 calories, 3 WW points for 2 Tablespoons, 4 grams of protein, and is Gluten Free, Dairy Free, Palm Oil Free, and Kosher.

The other brand I LOVE and RECOMMEND is Nerdy Nuts! These nut butters are low in points and are amazing!!  I have loved the every flavor!

What Sugar Substitute do you recommend?

I recommend the sugar substitute you use is granulated otherwise the texture will be gritty. The sugar substitute that I love and use is Lakanto Monkfuit Sweetener. It’s zero calories and zero SmartPoints. Please keep in mind-the point value can vary depending on the brand of sugar substitute you choose to use. 

Lakanto Monkfruit Sweetener also has a 1:1 ratio to real sugar. If you use a different sugar substitute you will want to use the equivalent to real sugar that is recommended on back of the sugar substitute package.

I use the Classic for the white granulated and Golden or Brown for the brown sugar substitute.

 

Kodiak Pancake Mix vs. Self Rising Flour

These peanut butter cookies are made with Kodiak Cakes Protein Pancake mix which creates a softer texture cookie and is the key ingredient of keeping these cookies to two points. If you are unable to find Kodiak Pancake mix or want a denser cookie you may substitute the Kodiak Cakes Protein Pancake mix for 1 and 1/3 cup self rising flour. The self rising flour will give these cookies a denser texture, however the point value may vary depending on the brand you use.

How do I make these Two Point Peanut Blossoms?

To make these peanut butter cookies you will:

Preheat your oven to 350 degrees. 

Line a cookie sheets with parchment paper.

In a large mixing bowl, cream together the two sugar substitutes and Jif whips peanut butter.

Mix until thoroughly combined.

Whisk in the egg or egg whites, water, and peanut butter extract until smooth.

(I like the extra peanut butter flavor that the peanut butter extract gives these cookies.)

Add Kodiak Pancake Mix along with the peanut butter powder 

stir until fully combined and a smooth dough is formed.  

Drop the dough by 1 rounded tablespoon onto cookie sheet, about 2-inches apart.

Flatten each ball with a back of spoon or cookie scoop.

Cook for 8-10 minutes or until edges are lightly golden.

After removing them from the oven, place a Hershey Kiss in the center of each cookie.

Then move the cookies to a cooling rack at room temperature.

Ingredients

  • 1 1/3 cup Kodiak Cakes Protein Pancake Power Cakes, Flapjack Mix
  • 1/4 cup zero point brown sugar substitute  Sukrin Gold or Lakanto Monkfruit Golden Sweetener 
  • 1/2 cup zero point white sugar substitute ( I use Lakanto Monkfruit Classic Sweetener)
  • 4 Tbsp Better'n Peanut Butter
  • 2 Tbsp peanut butter powder - I use Bell Plantation powdered PB2
  • 1 large egg or 2 egg whites 
  • 1 tsp peanut butter or vanilla extract
  • 1/4 cup water

Instructions

I bought mine on Amazon HERE You can also find it at Walmart or other grocery store chains. I know that it's been a hard item to find right now.

No, you can omit the PB powder if you'd like-it doesn't make a huge difference in flavor. You can add more 2 more Tbsp of Jif Whips, if desired.
