Ultimate BLT Salad

This Ultimate BLT Salad is packed with bacon, lettuce, tomatoes, cooked chicken, avocado, and croutons-making it the Ultimate BLT Salad! This can be served as a side dish or as a main dish!

 What ingredients do I need to make this Ultimate BLT Salad?

  • Center cut bacon– cooked and crumbled. I like to use Farmland Naturally hickory smoked center cut bacon. You can substitute it for turkey bacon, precooked bacon, or real bacon crumbles, if desire.  
  • Cherry tomatoes-sliced in half. I like to use Sunset Wild Wonders Gourmet Medley Tomatoes.
  • Cooked skinless, boneless chicken breast or rotisserie chicken without the skin– cut into 1 inch cubes. I like to season the cooked chicken with paprika, onion powder, seasoned salt, and garlic powder. 
  • Croutons-I use “Great Value” cheese and garlic seasoned croutons from Walmart. 
  • Avocado– thinly sliced. Be sure to weigh your avocado-you’ll get more by weighing it! THIS is the food scale that I love and recommend. 
  • Arugula leaves-I love mixing two kinds of lettuce for this Ultimate BLT salad. I use romaine and arugula leaves. If you don’t have access to arugula just add another 2 cups of romaine. 
  • Romaine lettuce- chopped.
  • Easy Skinny Ranch Dressing– this salad pairs perfectly with my Easy Skinny Ranch Dressing. You can find the recipe for that HERE. You can substitute that for your favorite store bought dressing, if you desire.

    What can I add to this Ultimate BLT Salad? 

    • Pasta-cooked Bowtie, Shells, Fusilli , Campanelle, Penne, or Orichette 
    • Cheese– shredded
    • Easy Skinny Ranch Dressing 

My Easy Skinny Ranch 

Ingredients:

  • 8 slices center cut bacon, cooked and crumbled 
  • 1 pint cherry tomatoes, sliced in half- I like to use Sunset Wild Wonders Gourmet Medley Tomatoes.
  • 2 cups arugula leaves
  • 3 cups romaine lettuce
  • 1 cup cooked skinless, boneless chicken breast or rotisserie chicken without the skin- cut into 1 inch cubes 
  • 1/4 cup croutons- I use “Great Value” cheese and garlic seasoned croutons from Walmart. 
  • 4 oz. or 1/2 small avocado, thinly sliced. Be sure to weigh your avocado-you’ll get more by weighing it!

Directions:

  1. In a large salad bowl combine lettuce/arugula, cooked chicken, sliced tomatoes, cooked bacon crumbles, avocado, and croutons. 
  2. When ready to serve, drizzle with your favorite dressing or my Easy Skinny Ranch Dressing or my Zero Point Creamy Jalapeño Cilantro Lime Dressing.
  3. Toss to combine.
  4. Enjoy!
