What ingredients do I need to make this Crustless Pumpkin Pie?
- Canned pumpkin purée– not pumpkin pie filling. 100% canned pumpkin
- Zero point brown sugar substitute – I use Lakanto Golden Monkfruit Sweetener
- Cinnamon
- Nutmeg
- Vanilla extract
- Pumpkin spice
- Large eggs– or you can use 1/2 cup liquid egg substitute
- Unsweetened almond milk– or you can substitute that for skim milk for additional points, a premier protein shake, unsweetened coconut milk, or Carbmaster no sugar added milk
What can I use as a substitute for the unsweetened almond milk?
If you have allergies to nuts and need a replacement for the unsweetened almond milk, here are a few options you could substitute the almond milk for:
- 8 oz. Vanilla or Caramel Premier Protein Shake– points would be the same
- 8 oz. Skim Milk- would increase the point value to 1 point per slice
- 8 oz. Carbmaster nonfat reduced sugar milk- points would be the same
- 8 oz. Unsweetened Coconut Milk- points would be the same
How do I make this Crustless Pumpkin Pie?
Preheat oven to 375 degrees.
Spray a 9-inch pie dish with nonstick cooking spray.
In a large mixing bowl, combine all ingredients.
Mix until all ingredients are well combined.
Pour into prepared pie dish.
Bake for 40-45 minutes or until knife inserted in the center comes out clean.
Remove from oven and let it cool for 10 minutes before serving.
Store leftovers in the refrigerator for up to a week.
What could I use for a low point crust?
May I suggest using my Lightened Up Graham Cracker Crust.
It’s only 4 points per serving and adds a delicious graham cracker taste to the pie.

Hi! This looks like a delicious recipe to try. I’m wondering, can I use stevia as a sugar substitute instead? How many packets do you think I could add to the batter? I’m thinking 10 or 11 but I’m not sure.

Yes, you can substitute the monkfruit for Stevia. The monkfruit I use has a 1:1 ratio to regular sugar, so you'll want to use the conversion for the same amount that you would for regular sugar. You can find the conversion for regular sugar on back of the stevia box.
