What Ingredients do I need to make these Air fryer Apple Pie Egg Rolls?

  • Apples-peeled, cored, and diced. I like to use Granny Smith apples. Granny Smith apples stay nice and firm while cooking. These apples are firm and will keep their shape – even as they completely soften. However, you could also use Honeycrisp or Braeburn apples which are both equally great for cooking.
  • Zero point brown sugar sweetener– I like to use Lakanto Golden or Brown Monkfruit Sweetener. You can substitute the Lakanto Golden or Brown sweetener for Swerve brown sugar or Truvia brown sugar.
  • Cornstarch
  • Cinnamon
  • Nutmeg
  • Lemon juice-the acidity on the lemon juice helps tenderizes the apples.
  • Salt
  • 12 egg roll wrappers-you can find these wrappers at most grocery stores. They are usually in the refrigerated salad dressing near the produce area.
  • White regular sugar or zero point white granulated sweetener-this is for the topping. I prefer using regular white sugar. Most zero point white sweeteners when not cooked can have a cooling effect that I don’t care for; therefore for the topping I like to use small amount of regular white sugar.
  • Cinnamon

Can I use I use the Zero Point Apple Pie Filling for these?

YES! If you use canned apple pie filling the point value will increase due to the added sugar. However, you can use the Zero Point Apple Pie Filling recipe for no additional points!

The apple pie filling in this recipe is my Zero Point Apple Pie Filling recipe-I just add less water to make it thicker.

What sweetener do I use to make these Air Fryer Pie Egg Rolls?

I recommend Lakanto Monkfruit Sweetener!? Why? Because it is the BEST TASTING sweetener on the market, has zero net carbs, zero glycemic, zero calories and ZERO points!!

Why is Lakanto monk fruit the best?

  • Historically, monk fruit has been used as an ancient medicine, a healing herb in Eastern medicine.
  • Replaces sugar with a natural, healthy option but tastes just like sugar.
  • Ease of use – use it in place of sugar in any of your favorite recipes, or even just in tea and coffee. The full line of Lakanto sweeteners provides a variety of flavors and textures for baking and cooking.
  • Lakanto monk fruit sweeteners do not raise blood sugar and does not raise plasma or glucose insulin levels.

How do I make these Air Fryer Apple Pie Egg Rolls?

Preheat air fryer to 400 degrees.

Peel, core and dice apples into bite size pieces.

Then place cored, peeled, diced apples in a large bowl and toss with lemon juice.

Add diced apples, water, sugar substitute, cornstarch, cinnamon, salt, and nutmeg into a medium saucepan or 5-quart dutch oven.

Stir to combine then bring to a boil over medium heat. Once it starts to boil, let it boil for a full two minutes. (this will thicken the sauce)

Cover and simmer. Stirring often, until apples soften, about 5 minutes.

Place a two tablespoons of apple mixture just below the center of wrapper.

Fold side corners toward center over filling.

Roll egg roll up tightly, pressing at tip and using a dab of water to secure the tip of the wrapper to itself.

Repeat steps until all of the wrappers are used.

In batches, arrange egg rolls in a single layer on tray in air-fryer basket; spray the eggs rolls with cooking spray.

Cook until golden brown, 5-6 minutes. Turn; spray the egg rolls with cooking spray.

Cook until golden brown and crisp, 5-6 minutes longer.

In a shallow dish combine 1 Tbsp sugar and 1/2 tsp cinnamon; stir to combine.

Roll and dust each hot egg roll into sugar cinnamon mixture.

Serve with sugar free caramel sauce, if desired.

Hi Kristina

Store leftovers in a ziplock bag in the fridge for 3-5 days. Reheat in air fryer or oven 360 for 3-5 min.

I’m going to freeze some of these without the cinnamon/sugar coating.

How long would I bake these in the oven and at what temp?

Lindsay Kehl

Thursday 21st of October 2021

Yes, These egg rolls can be baked in the oven if you don't have an air fryer. Spray the tops of the egg rolls with cooking spray. Bake at 425° for 10-15 minutes or until lightly browned. I recommend turning them half way through cooking.

Thanks
