How do I make these Chicken Cordon Bleu Roll Ups?
Preheat oven to 350 degrees.
Cut each breast in half horizontally into thinly pieces.

Place each breast piece between pieces of parchment paper.
Gently pound each chicken breast with a rolling pin until about 1/4 inch thick.

Add 1 slice of cheese, 2 oz. of ham in the middle of each sliced chicken breast.

Beginning from narrow end, roll breasts and seal each end with toothpick.

Beat one egg and place in shallow dish.
In another shallow dish add seasonings, bread crumbs and grated Parmesan. Mix until combined.

Coat each rolled up chicken breast in egg wash ( beaten egg with 1 tsp water)

and then roll chicken breast into dry mixture & coat evenly.
Place the chicken breasts on a (sprayed with non stick cooking spray) wire rack and place wire rack on baking sheet.
(The wire rack allows both sides of the chicken to crisp.)
Cook for 30-40 minutes or until chicken is thoroughly cooked.
