This Cinnamon Roll Baked Oatmeal Bake is a warm breakfast oatmeal bake made from pantry ingredients-oats, ground cinnamon, nutmeg, egg, and unsweetened almond milk. An easy breakfast that tastes like a warm gooey cinnamon roll in oatmeal form!

What is an Oatmeal Bake?

An Oatmeal Bake is a baked oatmeal casserole that consists of: oats, milk, sweetener or sugar, eggs, and different flavorings. These oatmeal bakes make for a tasty alternative to packaged instant oatmeal. Baked oatmeal tastes like a mix between a crumbly breakfast muffin and a bread pudding that’s crispy on top! 

This oatmeal bake has some structure to it! This is NOT mushy oatmeal-this oatmeal bake holds it’s shape and tastes just like a warm gooey cinnamon roll in an oatmeal bar form! This can be prep the night before and then just pop it in the oven the next morning.

What ingredients do I need to make this Cinnamon Roll Baked Oatmeal Bake?

  • Old-fashioned oats– not quick oats. You could use gluten-free oats for a gluten-free option.
  • Ground cinnamon
  • Ground nutmeg
  • Baking powder
  • Salt
  • Zero Point brown sweetener – I like to use Lakanto BROWN or Swerve Brown. You can find Lakanto online HERE.
  • Unsweetened almond or cashew milk
  • Large egg- room temperature.
  • Light butter-melted. You could also use unsweetened applesauce. I prefer to use Land o’ Lakes light butter made with canola oil.
  • Pure vanilla extract– for added flavor.
  • Light cream cheese-softened. Used for the icing.
  • Light butter– soft. This is for the icing. I use Land o’ Lakes light butter made with canola oil.
  • Powdered sugar or powdered sweetener – I prefer to use regular powdered sugar for the icing, sweetener tends to have a cooling effect when not cooked. If that doesn’t bother you, feel free to use zero point powdered sweetener from Lakanto or Swerve.
  • Milk -to thin the icing. You can use any milk for this.

How do I make this Cinnamon Roll Baked Oatmeal Bake?

Preheat the oven to 375° degrees.

Spray a 8×8-inch baking dish with non stick cooking spray. Set aside.

In a medium size mixing bowl, whisk together the milk, egg, vanilla extract, and melted light butter or unsweetened applesauce. 

In a separate large size mixing bowl, mix the oats, baking powder, salt, brown sugar, ground cinnamon, and ground nutmeg.

Add the wet ingredients into the oat mixture and stir to combine. 

Pour mixture into the prepared baking dish. 

Bake for 35 – 40 minutes or until the top of the oatmeal is golden brown and the oatmeal is set. 

In a small blender or using an electric mixer, blend or beat the softened cream cheese and light butter until fluffy.

Add the powdered sugar and milk and blend until well combined. 

Allow the oatmeal to cool for 5-8 minutes before adding icing. 

Drizzle the oatmeal all at once or store the icing in the refrigerator and use on each serving individually, as desired.

Store leftovers in the fridge for up to a week. Warm up in the microwave.

  • 1 Tbsp milk – you can use any milk of your choice.

I've made this a couple times before and LOVED it. Today I added a cut up apple and some cut up walnuts. Really good that way too.

Definitely a keeper and a recipe to share. I love cinnamon rolls. It was easy to make gluten free. We are having an early fall rainy day and this is a great breakfast. If you have a chance, would you figure out a recipe for a microwaveable cinnamon roll cake in a mug. Thanks.
