These Easy Apple Pie Overnight Oats are packed with a homemade cinnamon apple filling, oats and nut butter-and makes for the best quick and easy, make-ahead breakfast!

What Ingredients do I need to make this Easy Apple Pie Overnight Oats?

  • Old fashioned oatsI don’t recommend using quick or instant oats- they will become too soggy overnight and won’t hold up. If you are wanting a gluten-free option, you can use Quaker Gluten Free Old Fashioned Rolled Oats. You can find them at Whole Foods or HERE on Amazon.
  • Unsweetened almond milk
  • Ground cinnamon
  • Zero Point Cinnamon Apple Pie Filling.-you can also use the canned no sugar added apple pie filling. However, that would increase the point value by 3 smartpoints. You can find my Zero Point Cinnamon Apple Pie filling recipe HERE.
  • Cinnamon Toast Crunch cerealoptional. I love the adding this in the morning for a little crunch! 
  • Low point peanut or nut butter- I love and recommend American Dream Nut Butters. These nut butters are low in points and are amazing!!  I have loved the every flavor! The cinnamon toasties almond butter is hands down my favorite! It tastes like cinnamon toast crunch!
  •  Four 8 oz. mason jars or containers with lids– you can get them HERE on Amazon.

How do I make these Easy Apple Pie Overnight Oats?

Make the zero point cinnamon apple pie filling-using this recipe HERE.

In a large mixing bowl combine the oats, cinnamon, peanut or nut butter, and unsweetened almond milk.

Scoop 1/2 cup mixture into 8 oz. mason jar. Repeat step for the remaining mason jars.

Take the apple pie filling and scoop it into the mason jars, filling them up. Cover and place in the fridge overnight.

Remove from fridge. Stir and crush 1 Tbsp crushed Cinnamon Toast Crunch cereal on top, if desired.

  • 1/2 tsp ground cinnamon
  • 2 cups Zero Point Cinnamon Apple Pie Filling -recipe HERE
  • 4 Tbsp Peter Pan Whipped Peanut Butter or Almond Butter -I use American Dream Cinnamon Toasties Nut Butter (optional but highly recommended) 
  • 4 Tbsp Cinnamon Toast Crunch cereal, crushed

Instructions

    1. Make the zero point cinnamon apple pie filling. *see recommended products for recipe link
    2. In a large mixing bowl combine the oats, cinnamon, peanut or nut butter, and unsweetened almond milk.
    3. Scoop 1/2 cup mixture into 8 oz. mason jar. Repeat step for the remaining mason jars.
    4. Take the apple pie filling and scoop it into the mason jars, filling them up. Cover and place in the fridge for at least 2 hours or preferably overnight.
    5. Remove from fridge. Stir and crush 1 Tbsp crushed Cinnamon Toast Crunch cereal on top, if desired.

Is Stevia a good alternative to the monkfruit?

Yes, Stevia can be used for this recipe-just keep in mind that Stevia is concentrated and sweetener than Lakanto Monkfruit which has a 1:1 ratio with regular sugar. Be sure to use the conversion chart on back of the package for real sugar!
