This Easy Meatball Biscuit Casserole is a simple satisfying casserole-it’s quick and easy and made with just FOUR ingredients! A super easy family dinner!

What ingredients do I need to make this Easy Meatball Biscuit Casserole?
- Turkey meatballs-I either use the frozen Great Value Turkey meatballs from Walmart or my homemade turkey meatballs recipe (which can be found HERE). You’ll want to thaw the meatballs if they are frozen.
- Marinara sauce- I use either my zero point marinara sauce ( which can be found HERE ) or Prego no sugar added sauce.
- Shredded light mozzarella– I use light mozzarella Market Pantry from Target
- Refrigerated Biscuits-I use either 2 cans of the 7.5 oz. Great Value homestyle biscuits or using my quick and easy dough recipe (which can be found HERE) or any refrigerated biscuit that are 3 points each would work)
- Italian seasoning or fresh parsley, and Parmesan cheese– as optional garnish
How do I make this Easy Meatball Biscuit Casserole?
Heat the oven to 350 degrees. Spray a 3-quart casserole dish with non stick cooking spray.
Place meatballs in prepared casserole dish.
Pour the marinara sauce over the meatballs.
Sprinkle mozzarella cheese over the marinara sauce.
Cut the biscuits or dough into quarters.
Top the casserole with biscuit or dough pieces.
Sprinkle Italian seasonings over the top, if desired.
Bake for 40-45 minutes or until the casserole is bubbly on the edges and the biscuits are golden brown.
Garnish with fresh parsley and grated Parmesan cheese, if desired.

Delicious and my kids loved it! However, the bottom of the biscuits did not bake. The tops of the biscuits were brown, but the parts that touched the sauce were still doughy. Any tips for helping with that?
