Egg Roll in a Bowl

This Egg Roll in a Bowl is a simple, easy to make, delicious low point meal. What I love most about this recipe is that it’s not only healthy and delicious but that it’s amazing as leftovers!

How do I make this Egg Roll in a Bowl? 

Spray a skillet or wok with non stick cooking spray, add ground turkey or beef.

Cook on medium heat until ground turkey is cooked all the way through, add 1 Tbsp sesame oil, cabbage and carrots.

Stir until all ingredients are incorporated. 

Add minced garlic and soy sauce and sauté for 2-3 minutes.

Sprinkle scallions, sesame seeds, and sriracha sauce on top before serving.

 

Ingredients:

  • 1 head of red and green cabbage or 1 (.9 oz.) package of cabbage mix 
  • 12 oz. 99% ground turkey, 96% lean ground beef or pork or 98% ground chicken
  • 1/3 cup shredded carrots
  • 1 Tbsp sesame oil
  • 1 tsp minced garlic
  • 1 bunch of scallion onions, thinly sliced
  • 1 tsp sesame seeds
  • 2 Tbsp soy sauce
  • Sriracha sauce, if desired 
  • 1 large egg, scrambled (optional)

Directions:

  1. Spray a skillet or Wok with non stick cooking spray, add ground turkey, and cook on medium heat until ground turkey is cooked all the way through, add 1 Tbsp sesame oil, cabbage and carrots.
  2. Stir until all ingredients are incorporated. Add scrambled egg, if desired. 
  3. Add minced garlic and soy sauce and sauté for 2-3 minutes.
  4. Sprinkle scallions, sesame seeds, and sriracha sauce on top before serving.

I made this tonight and OMG it’s a keeper recipe for sure!!! Thank you Linds so much!! I added a little bit of celery and substituted liquid amino’s for the soy sauce. Perfect recipe...will be making again!!

How do handle making it for lunch prep? Do make the recipe as listed above and just warm up?

Hi Nancy,

Yes, I make it as directed then divide into servings and place into air tight containers. Reheat in the microwave. This will stay fresh for up to a week or in the freezer for a month.
