We love these Ground Beef Burrito Bowls at our house! They are filling, fresh, healthy, and customizable! They make for a versatile quick and easy dinner. My kids love to customize their own bowls making it a winning meal.

What ingredients do I need to make these Ground Beef Burrito Bowls?
- Lean ground beef, turkey or chicken– I like to use 96% lean ground beef.
- Onion-finely diced
- Garlic-minced
- Taco seasoning
- Back beans-drained and rinsed
- Sweet corn-fresh or frozen and thawed
- Lettuce-shredded. You can use romaine or iceberg
- Cherry or mini Heirloom tomatoes-diced
- Avocado-mashed or diced
- Long-grain white rice
- Reduced sodium chicken broth or water
- Cilantro-chopped
- Non fat plain Greek yogurt
- Limes
- Salt-to taste
How do I make these Ground Beef Burrito Bowls?
In a small mixing bowl combine Greek yogurt, lime juice, and zest.
Whisk together and season with salt. Set aside.

In a medium saucepan, bring water (or broth) and a pinch of salt to a boil. Add the rice, stir once, and reduce heat to low. Cover and simmer for 15-20 minutes, or until the rice is fully cooked and the liquid is absorbed.Stir in lime juice and garnish with cilantro. Set aside.

In a large skillet, heat olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes, until softened. Add the garlic and sauté for another 30 seconds, until fragrant.

Add the ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon as it cooks. Drain excess fat if needed.

Stir in the taco seasoning and water. Cook for another 5 minutes, allowing the sauce to thicken.

Divide the cooked ground beef into 4 equal portions. I like to weigh it and divide the weight into fourths.

Divide the toppings into four portions: 1/4 cup rice, 1/4 cup black beans, 1/4 cup corn, 1/4 cup shredded lettuce, 1 Tbsp avocado, 1/4 cup tomatoes, cilantro, lime crema, and garnish with sliced jalapeños, if desired.
