This Ham, Spinach, and Egg Casserole is the BEST of the BEST – layered with Italian style croutons, and packed with diced ham, spinach, and cheese! A simple yet delicious Breakfast Casserole recipe that can be prepared the night before!

What ingredients do I need to make this Ham, Spinach, and Egg Casserole?

  • Italian seasoned croutons– I use Fresh Gourmet Premium Croutons
  • Chopped or diced ham- I use Kroger diced ham
  • Frozen chopped spinach, thawed and well drained by placing the thawed spinach in a colander over the sink and then pressing down with a paper towel. This is key to making sure the casserole isn’t runny or soggy!
  • Shredded reduced fat cheddar cheese
  • Large eggs or liquid egg beaters– if you have eggs as a zero point food item you can use whole eggs otherwise you will want to use liquid egg beaters to keep the point value low.
  • Fat free half & half or mix 1 cup unsweetened almond milk with 1/2 cup non fat plain Greek yogurt
  • Salt and ground black pepper, to taste
  • Paprika

How do you make this Easy Ham, Spinach, and Egg Casserole?

Preheat oven to 350 degrees.

Spray a 9×13″ baking dish with non-stick cooking spray. 

Layer ingredients in baking dish in this order: croutons, chopped ham, spinach, and cheese.

In a mixing bowl, whisk together eggs, half & half, salt, pepper, and paprika.

Gently pour egg mixture on top of cheeses, distributing evenly over the entire baking dish.

Bake for 35 to 40 minutes or until set and lightly browned.

Serve warm.

  • 1/4 tsp black pepper
  • 1/2 tsp paprika

Directions:

  • Preheat oven to 350 degrees.

Could fresh spinach be substituted for the frozen, if so how would I modify this recipe?
