Light Swiss Cheese Green Bean Casserole

This Light Green Bean Casserole is a delicious dish for Thanksgiving or Christmas. It is made with Swiss cheese which gives this dish a creamy amazing taste!

Makes 8 (1/2 cup) servings

What makes this Light Green Bean Casserole so good?

I love using swiss cheese in my green bean casserole- it gives this dish amazing flavor. The brand I use is Finlandia light swiss-I buy it in a block and grate it.

I love to use the cut green beans instead of the french style green beans for this casserole. However, either one would work

I use French’s french onions to add a light crunch to this casserole-and gives it so much delicious flavor.

How do I make these Swiss Cheese Green Bean Casserole?

Preheat oven to 400 degrees.Spray a 9×13 baking dish with non stick cooking spray. In a skillet heat butter and add your flour to make a roux.

Once the flour is incorporated and thickening, turn to low heat and add condensed can of soup. Then add the onion powder, salt, pepper and sugar substitute.

In a mixing bowl combine, drained green beans with Swiss cheese. Stir until incorporated.  Place green bean mixture into prepared baking dish.

Layer sauce over top of green beans and cheese mixture.

Sprinkle fried onions and bake for another 5 minutes or until onions are golden.

  • 3 (16 oz.) cans cut green beans
  • 2 Tbsp Land o’ Lakes light butter made with canola oil or any light butter
  • 2 Tbsp all-purpose flour
  • 1 tsp sugar sweetener( I use Lakanto Monkfruit Sweetener)
  • 1 tsp salt
  • 1 tsp onion powder
  • 1/4 tsp pepper
  • 1 (10.5 oz.) can Healthy Request cream of chicken or mushroom soup, condensed 
  • 6 oz. light Swiss cheese, shredded-I use Finlandia light Swiss cheese
  • 3/4 cup French’s Fried Onions

Directions:

  1. Preheat oven to 400 degrees.

Can this be made without the cheese? Didn’t know if it would mess up the consistency of it.

This was absolutely fantastic and will be my go-to green bean casserole recipe from now on. The cream of mushroom soup (the sauce) in this recipe is a keeper too to just have as soup. I love that most of this is from scratch and fresh ingredients are used and not all the processed stuff. Thanks so much for sharing!
