This Easy Lightened Up Pumpkin Shaped Cheeseball is a simple lightened up cheese ball recipe molded into a cute little pumpkin. This makes for a perfect fall appetizer for a Halloween party or Thanksgiving appetizer. And while there is no pumpkin flavor in the cheeseball, it still makes for a delicious Fall snack or appetizer.

What ingredients do I need to make this Easy Lightened Up Pumpkin Shaped Cheeseball?

  • Reduced fat cream cheese-room temperature
  • Laughing cow cheese wedges – any flavor. I love using the Garlic and Herb.
  • Velveeta cheese shreds or reduced fat sharp cheddar cheese- shredded and divided.
  • Ranch seasoning mix– I like using the Hidden Valley creamy dill ranch dip
  • Bell pepper- stem removed

  • Crumbled bacon
  • Chopped jalapeño
  • Garlic powder 
  • Crushed pineapple
  • Crushed nuts
  • Worcestershire sauce

How do I make this Easy Lightened Up Pumpkin Shaped Cheeseball?

In a medium bowl, combine the cream cheese, laughing cow cheese wedges and ranch seasoning.

Fold in 1/2 cup reduced fat shredded cheese until. Mix until well combined. 

Using a rubber spatula or your hands, shape the mixture into a ball.

Transfer the mixture to a large piece of plastic wrap continuing shaping the cheese into a round ball.

Wrap twine or 3-4 thick rubber bands around the cheese ball to shape into pumpkin. Refrigerate for at least 4 hours or overnight until firm.

Remove the twine or rubber bands and plastic wrap.

Gently press the remaining 1/2 cup of shredded cheese on the outside of the cheese ball.

Top pumpkin with bell pepper stem to finish. Serve with crackers or your favorite veggies! 

You can make 2-3 days ahead. Wrap and store in refrigerator.
