What makes this Creamy Cucumber Salad Skinny?
I use a combination of Light Mayo and non fat plain Greek yogurt to keep the calories and points low without sacrificing all the creaminess and flavor that mayo gives. Non fat plain Greek yogurt is zero points and loaded with protein-the Kraft light mayo or Best foods light mayo is 1 Freestyle Smart Point for 1 tablespoon and adds a creaminess and flavor that you just don’t get with non fat plain Greek yogurt. This is my own opinion. I have a passion of recreating recipes that are lower in points without compromising the taste of the classic or original recipe-and this is one of those recipes- you won’t be able to tell the difference between my version and the classic version made with sour cream or full fat Mayonnaise.
However, if you prefer you can easily make this cucumber salad with just the non fat plain Greek yogurt instead of the combination of the two.

Cucumbers have one of the highest water content. In fact, cucumbers are made up of about 96% water-which means they carry a ton of water, that is why I like to drain as much as I can from the cucumbers before adding the dressing. To do this, you’ll peel and slice the cucumbers and onions and let them drain in a strainer for 15-20 minutes before tossing them in the dressing.

This salad can be stored in an airtight container for 5 days in the fridge.
How do you make this Skinny Creamy Cucumber Salad?
Start by peeling and cutting the English cucumbers and sweet onions:
In a large mixing bowl combine, cucumbers, sweet onion, and salt.
Cover bowl with foil or plastic wrap and let sit for 30 minutes.
Meanwhile, in a medium mixing bowl combine, Light Kraft Mayo, sugar or sugar substitute, vinegar, dill, garlic powder, and pepper.
The overall point value is the same regardless if you use 1 tsp sugar or sugar substitute.
Whisk until smooth.
Pour cucumber mixture into a strainer and set in a small bowl to allow liquid to fully drain. About 15-20 minutes.
Pat cucumbers and onions with paper towel.
Pour dressing over the cucumbers and onions and
stir until cucumbers and onions are coated with the dressing.
Cover with aluminum foil or plastic wrap and refrigerate for at least 2 hours.
Garnish with fresh parsley, if desired.

- 1 Tbsp salt
- 1/2 cup Kraft Light Mayo

- 1 tsp zero point sugar or sugar substitute ( I use Lakanto Classic Monkfruit Sweetener)
- 2 Tbsp white distilled vinegar
- 1 tsp dried or fresh dill weed
- 1 tsp garlic powder
- 1/2 tsp black pepper
Directions:
- In a large mixing bowl combine, cucumbers, sweet onion, and salt.
- Cover bowl with aluminum foil or plastic wrap and let sit for 30 minutes.
- Pour cucumber mixture into a strainer and set in a small bowl to allow liquid to fully drain. About 15-20 minutes.
- Pat cucumbers and onions with paper towel.
- Transfer drained cucumber mixture to a large bowl. Set aside
- Meanwhile, in a medium mixing bowl combine, Light Kraft Mayo, sugar or sugar substitute, vinegar, dill, garlic powder, and pepper. Whisk until smooth.
- Pour dressing over the cucumbers and onions and stir until cucumbers and onions are coated with the dressing.

Can’t say thank you enough for this amazing recipe. I have tried to create a non soggy cucumber salad for years but had never seen the instructions to salt and drain the cucumbers and onions. Oh what a difference that makes! This is not just a cucumber/onion salad but a creamy delicious “perfect for company” salad to serve for a special occasion or a simple luncheon salad.
