Skinny Meatloaf

This Skinny Meatloaf is super easy to make-requires only a few ingredients-extra lean ground beef, egg, breadcrumbs, dry onion mix, and tomato sauce. It’s juicy, delicious, and low in points.

How do I make this Skinny Meatloaf?

For this Skinny Meatloaf- I like to use Great Value 96% extra lean ground beef.  However, you may substitute the lean ground beef for 93-99% ground turkey. The point value will vary depending on what you use. ( See the note section for the different point values.)

 This meatloaf base is very versatile so feel free to add fresh cut bell peppers into the mixture, if you desire. 

You will start by preheating the oven to 350 degrees.

Spray a 8 x 4 inch loaf pan with non stick cooking spray. Set aside.

Combine all ingredients in a large mixing bowl. 

Stir until all ingredients are well incorporated.

Pour into a prepared loaf pan.

Drizzle the top with reduced sugar ketchup or tomato sauce.

Cook for 40-45 minutes or until juices run clear.

Let it cool for 10 minutes on the counter before serving. Use a knife to cut into five equal servings.

Serve with your choice of vegetables, mashed potatoes, or my loaded mash cauliflower.

Ingredients

  • 1.50 lb. 96% extra lean ground beef ( I use 96% Great Value extra lean ground beef) 
  • 1/2 cup Italian style bread crumbs
  • 1 egg
  • 2 Tbsp water
  • 1 Tbsp packet of dry onion mix*
  • 1/2 cup tomato sauce
  • 3 Tbsp reduced sugar ketchup or tomato sauce, more for the top- if desired. 

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine all ingredients in a large mixing bowl.
  3. Stir until all ingredients have been incorporated.
  4. Pour into a lightly greased loaf pan.
  5. Drizzle the top of the meatloaf with reduced sugar ketchup or tomato sauce, if desired.
  6. Cook for 40-45 minutes or until the juices run clear.
  7. Let it cool for 10 minutes on the counter before serving. Use a knife to cut into five equal servings.

Notes

*Every brand of dry onion soup mix can vary by flavor and the amount of salt that is used. I usually use 1 packet ( 2 tbsp) of Lipton's dry soup mix and love the flavor that it gives this meatloaf-however I have know other brands of dry onion soup mix can be a bit more salty therefore I recommend only using 1 Tbsp.

This was AMAZING! Best meatloaf I think I’ve ever made and my husband would agree! This will be my go-to meatloaf recipe from now on. I did mix some sugar free ketchup with Sweet Baby Ray’s sugar free bbq sauce fur the topping and it really added a nice flavor.
