How do I make this Skinny Meatloaf?

For this Skinny Meatloaf- I like to use Great Value 96% extra lean ground beef.  However, you may substitute the lean ground beef for 93-99% ground turkey. The point value will vary depending on what you use. ( See the note section for the different point values.)

This meatloaf base is very versatile so feel free to add fresh cut bell peppers into the mixture, if you desire.

You will start by preheating the oven to 350 degrees.

Spray a 8 x 4 inch loaf pan with non stick cooking spray. Set aside.

Combine all ingredients in a large mixing bowl.

Stir until all ingredients are well incorporated.

Pour into a prepared loaf pan.

Drizzle the top with reduced sugar ketchup or tomato sauce.

Cook for 40-45 minutes or until juices run clear.

Let it cool for 10 minutes on the counter before serving. Use a knife to cut into five equal servings.

Serve with your choice of vegetables, mashed potatoes, or my loaded mash cauliflower.

Notes:

*Every brand of dry onion soup mix can vary by flavor and the amount of salt that is used. I usually use 1 packet ( 2 tbsp) of Lipton’s dry soup mix and love the flavor that it gives this meatloaf-however I have know other brands of dry onion soup mix can be a bit more salty therefore I recommend only using 1 Tbsp.

Substitution Point Values:
  • If you use 99 % ground turkey it is 3 Smartpoints per serving.
  • If you use 93% ground turkey it is 7 Smartpoints per serving.
  • If you use Butterball 93% ground turkey it is 6 Smartpoints per serving.

Hi Lyndsay, I’ve used several of your recipes which I love & greatly appreciate. Im ready to purchase your ebook cook book. Bit confused, would it download to my Kindle in book form or how does that work? Have a tech Savy daughter home today who can help me. Surely do appreciate your response.

Hi, going to make this tonight and I'm unsure about whether the 3tbs of ketchup goes IN the meatloaf, or whether its the drizzle portion on the top?. Thanks so much, it looks amazing!!

I’ve made this a couple of times and it’s great but am wondering if it can maybe be assembled the night before and refrigerated before cooking the next day? If so, should the ketchup topping be added right before cooking, instead of the night before? Please advise- thank you!!

Hi Suzanne,

Yes, I have made this 24 hours before and stored in the fridge prior to cooking. I topped it with the ketchup at the time of assembling. You may need to increase the cooking time since the meatloaf was quite cold- just by a 5-7 minutes. ( Just be sure to keep your eye on it)

Thank you so much!

This was very good, and meatloaf isn’t even one of my favorite meals! I didn’t feel bloated after eating and really liked the taste of the reduced-sugar ketchup topping. Will definitely make again!
