Skinny Cobb Salad

This Skinny Cobb Salad has some of my favorite ingredients: romaine lettuce, grilled chicken, crispy bacon, hard boiled eggs, cheese, avocado and drizzled with your favorite salad dressing!

What is in a Cobb Salad?

The Cobb salad is a main-dish American garden salad typically made with chopped salad greens (iceberg lettuce, watercress, endives and romaine lettuce), tomato, crisp bacon, boiled, grilled or roasted (but not fried) chicken breast, hard-boiled eggs, avocado, chives, Roquefort cheese, and red-wine vinaigrette. 

Lettuce

 The traditional Cobb salad uses a mix of greens: Iceberg lettuce, watercress, endives and romaine lettuce. I like to use a combination of Romaine lettuce, Iceberg and spring mix for different textures. 

Hard Boiled Eggs:

Dice hard boiled eggs in quarters lengthwise. You can make hard boiled eggs in the instant pot, on the stove, or occasionally I like to buy Fresh Hard-Cooked Peeled Eggs from Trader Joe’s or Costco to simplify the prepping of this salad. Fresh Hard-Cooked Peeled Eggs are perfect when you need a fast easy meal prep.

Cheese:

You can use light pepper jack, Swiss, Mozzarella, blue cheese, Monterey, light Cheddar, or Roquefort cheese, which is a sheep milk cheese is the traditional cheese used in a Cobb salad.  I use Trader Joe’s lite three cheese blend-since it’s low in points and tastes great.

Chicken:

You can use grilled, or rotisserie chicken. For easy meal prep you can use Tyson’s precooked grilled chicken strips or rotisserie chicken from the store. 

Bacon:

 You can use turkey bacon, center cut bacon, or precooked bacon.  For an easy prep-I use Hormel’s precooked bacon. I cook in the microwave for 60 seconds or until crispy and chop it into pieces.

Tomatoes:

You can use diced grape or cherry tomatoes. I forgot to add these when I snapped a picture of my salad…oops! 

Avocado:

Avocado takes this to the next level. Ripe is best. Ddi you know measuring avocado will get you more for the point value? 1 ounce of avocado is only 1 point!! Use a food scale to measure out 1 oz. of avocado. Dice into bite size pieces.

Dressing:

 A red wine vinaigrette is the traditional dressing for Cobb Salad however, feel free to use your favorite dressing. I like mine with my Easy Skinny Ranch Dressing.  It’s low and points ( 1 point for 2 Tbsp)  and tastes amazing! 

Croutons:

I like to add a few for a little crunch in my salad. These are optional and can be omitted, if desired. 

Ingredients:

  • 1 1/2 cups lettuce ( Iceberg, Spring Mix, Romaine )
  • 2 slices bacon, diced  ( equivalent to 2 points for 2 slices of center cut, turkey bacon, chicken bacon or or Hormel precooked bacon) I use Sam’s Club Hormel precooked bacon
  • 2 hard boiled eggs, diced 
  • 1/4 cup cheese ( light pepper jack, Swiss, Mozzarella, blue cheese, Monterey, Roquefort, or light Cheddar) I use Trader Joe’s lite 3 cheese blend
  • 1 cup grilled or rotisserie chicken, diced 
  • 1 oz. avocado, diced
  • 2 Tbsp croutons, optional topping ( I use New York Texas Toast Croutons)
  • Dressing of your choice ( I use my Easy Skinny Ranch Dressing

Directions:

  1. Place the lettuce in a large bowl arrange, chicken, bacon, hard boiled eggs, tomatoes, avocado slices, and cheese in sections over the lettuce.
  2. Season with salt and pepper, to taste
  3. Drizzle dressing over the salad and serve immediately.

Hi! I halved the recipe since I was having this as a light lunch-used Hormel bacon bits, and light blue crumbled cheese and it was delish! Thanks for posting
