What ingredients do I need to make these Two Point Lucky Charms Cupcakes?
- Kodiak Cakes Protein Pancake Power Cakes, Flapjack and Waffle Baking Mix, Buttermilk

- Unsweetened applesauce
- Vanilla or lemon extract ( I use lemon extract)
- Water (give or take depending on the batter consistency)
- Granulated white sugar sweetener I use Lakanto Classic Monkfruit )
- Egg
- Sugar Free cool whip
- Lucky Charms marshmallows cereal
Ingredients:
- 1 cup Kodiak Cakes Protein Pancake Power Cakes, Flapjack and Waffle Baking Mix, Buttermilk
- 1/4 cup any flavor 100-110 calorie protein powder ( I use Clean Simple Eats Simply Vanilla. You can save 10% on your order with promo code: POUNDDROPPER. Click HERE to order. You could use an additional 1/4 cup Kodiak Pancake Mix if you don’t prefer the extra protein in the protein powder
- 1/2 cup unsweetened applesauce
- dash of vanilla or lemon extract ( I use lemon extract)
- 1/2 cup water (give or take depending on the batter consistency)
- 1/3 cup granulated white sugar substitute ( I use Lakanto Classic Monkfruit )
- 1 egg
- 12 Tbsp fat free cool whip
- 24 grams Lucky Charms marshmallows
Directions:
- Preheat oven to 350 degrees.
- In a mixing bowl combine kodiak mix, protein powder.
- Using a wire whisk, mix in egg, sugar substitute, unsweetened applesauce, extract and water until well blended.
- Place 12 cupcake foil liners into a muffin tin or spray a muffin tin with non stick cooking spray.
- Pour batter into each liner (about 1/2 full).
- Cook for 12-15 minutes.
- Remove from oven and allow them to cool for 5-10 minutes.
- Evenly spread 1 Tbsp of fat free cool whip on top of each cooled cupcakes.
- Using a food scale measure out 2 grams of Lucky Charms marshmallows and sprinkle on each cupcake.
