Mexican Corn Dip

This Mexican Corn Dip is the perfect dip to take to your next pot luck or family gathering! It’s sure to be a crowd pleaser!

Makes 6 (1/2 cup servings)

How do I make his Mexican Corn Dip?

In a mixing bowl combine, thawed corn, jalapeños & green chiles. Stir in Greek yogurt and light mayo and continue stirring until all ingredients are well combined.

Add green onion, chili powder, and lime juice.

Cover with aluminum foil or plastic wrap and let it chill in the refrigerator for 30 minutes prior to serving.

Sprinkle with Parmesan cheese before serving.

Serve with Tostitos bite size tortilla chips (24 chips for 4 points)

or your favorite low point chips or crackers

 

Ingredients:

  • 1 (16 oz) bags frozen, thawed sweet yellow corn, or 1 ( 16 oz.)  Trader Joe’s roasted corn 
  • 1 (4 oz) can fire roasted green chilies, drained 
  • 1 (4 oz.) can chopped jalapeño peppers, drained
  • 1/2 cup green onion, chopped
  • 2 Tbsp light Kraft mayo
  • 1/4 cup plain non fat Greek yogurt 
  • 1 wedge of fresh lime
  • 1/8 tsp chili powder
  • pinch of smoked paprika 
  • 1 oz. grated Parmesan cheese for topping
  • fresh cilantro for garnish

Directions:

  1. In a mixing bowl combine, thawed corn, jalapeños & green chiles.
