Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl combine kodiak mix, protein powder.
  3. Using a wire whisk, mix in egg, sugar substitute, unsweetened applesauce, extract and water until well blended.
  4. Place 12 cupcake foil liners into a muffin tin or spray a muffin tin with non stick cooking spray.
  5. Pour batter into each liner (about 1/2 full).
  6. Cook for 12-15 minutes.
  7. Remove from oven and allow them to cool for 5-10 minutes.
  8. Evenly spread 1 Tbsp of fat free cool whip on top of each cooled cupcakes.
  9. Using a food scale measure out 2 grams of Lucky Charms marshmallows and sprinkle on each cupcake.

Servings: Makes 12 regular size cupcakes

GREEN/BLUE/PURPLE: 2 smart points each

Notes:

It’s best to frost only the cupcakes you plan on serving or eating immediately. The lucky charms will become soggy if they are added on the cupcakes with the cool whip and stored in the refrigerator.

These cupcakes can be stored for up to a week in the refrigerator.

Question: Can I include a FLEX Flavor Stick to make any flavor? (I would omit the Lucky Charm marshmellow)

Hi! Love your recipes! Can you buy just the marshmallows or do you buy the cereal and just pick them out?

I was so excited that I had everything in the house to make these last night with my son. Instead of the protein powder I used pillsbury sugar free vanilla cake mix and I colored the batter green for st Patrick's day. For the frosting I used marshmallow fluff. They came out great. Thank you for all of your recipes.

You can buy just the marshmallows on Amazon here >- https://amzn.to/2Cgm9nB. I usually just buy the cereal and pick them out and measure them.
