What ingredients do I need to make this Easy Skinny Coleslaw?
- Coleslaw mix- in a bag.
- Green onions-diced
- Light Kraft mayo-I use a combination of light mayo with non fat plain or Greek yogurt. Using Greek yogurt instead of mayonnaise still creates a creaminess—but has less fat, calories, and points that mayonnaise can carry. I don’t recommend substituting the entire amount with the Greek yogurt since it tends to carry a lot more water than mayo and can cause the coleslaw to get soggy. I use light Kraft mayo as a substitute for real mayo. It’s only 1 point per tablespoon, and tastes just like the real deal.
- Non fat plain or Greek yogurt- you could also non fat plain yogurt if you’re not a Greek yogurt fan. But hear me out-the combination of the Italian dressing, cider vinegar, and light mayo masks the tanginess of the Greek yogurt and makes this coleslaw much creamer!
- Light or fat free Italian dressing – In this recipe I use Olive Garden’s light Italian dressing it is 1 smartpoint per 2 Tablespoons and tastes fantastic. You can find it at most grocery stores in the salad dressings or online here on Amazon.
- White granulated sugar substitute – I use Lakanto Classic Monkfruit Sweetener
- Apple cider vinegar
- Salt
- Black pepper
- Cilantro- for garnish, if desired
How do I make this Easy Skinny Coleslaw?
This Easy Skinny Coleslaw is so simple to make-start by combining, coleslaw, and diced green onions into a large mixing bowl.
Stir until scallions are incorporated into coleslaw mix.
In a small mixing bowl combine, light mayo, non fat plain or Greek yogurt, salad dressing, sugar substitute, vinegar and salt.
Whisk until all ingredients have been well combined.
Pour dressing over coleslaw. Stir until the dressing has been well combined with coleslaw mix.
Fold in the cilantro, if you desire.
Cover and place in the refrigerator for at least 30 minutes or overnight before serving.
This allows the coleslaw to absorb the dressing and all the flavors.
Garnish with more cilantro, if desired.
