For these Copycat Starbucks Vanilla Bean Scones I use Lakanto Monkfuit Sweetener. It’s 0 calories and 0 Freestyle Points. I recommend that the sugar substitute you use is granulated otherwise the texture will be gritty.

If you notice in this recipe I use one large egg white -and the reason I only use the egg white is because the yolk tends to give these scones a yellowish tint-and since these scones are vanilla bean-I prefer the dough to be white vs. yellow.
For the base of this recipe I use the two ingredient dough (a.k.a. self rising flour and Greek yogurt). However, I have found that combining an egg or egg white to the “two ingredient dough” and then reducing the amount of Greek yogurt really helps with the stickiness and texture of the dough.
Keep in mind eggs have a great ability to leaven or puff up foods when air is beaten into them. So, egg whites are especially good at this and, and when beaten, they create a foam that has more stability and volume than whole eggs or yolks.
Also, room temperature egg whites create the best foam volume and stability.
Ingredients:
- 1 1/2 cup self rising flour ( I use Gold Medal)
- 1 cup non fat plain Greek yogurt
- 3 Tbsp white granulated sugar substitute ( I use Lakanto Classic Sweetener)
- 1 Tbsp vanilla extract
- 1 large egg white
*Icing:
- 1 1/2 Tbsp fat free half and half cream or skim milk
- 1/2 cup powdered sugar substitute ( I use Lakanto Powdered Sugar Monkfuit Sweetener)
- 1 tsp vanilla extract
Directions:
- Preheat oven to 350. Line a baking sheet with parchment paper.
- In a medium mixing bowl whisk the sugar, and self rising flour. Using a fork mix the greek yogurt into the mixture until all the flour is blended together.
- Add vanilla extract and egg white. Mix with a spoon to combine.
- Using your hands, knead into a soft dough, doesn’t take long to do this 1-2 minutes.
- Roll the dough to make a rectangle, make sure the dough is about an inch thick.
- Using a pizza cutter or knife, cut the dough into 6 triangles.
- Place the triangles on the parchment paper and bake for about 10-12 minutes, or until lightly golden.
- To make the glaze: whisk the half and half or skim milk, the powdered sugar substitute and vanilla together.
- Once scones have cooled, drizzle the glaze on top of each scone.

- 1/2 cup powdered sugar substitute ( I use Lakanto Powdered Sugar Monkfuit Sweetener)

- *You could also melt 1 Tbsp Pillsbury sugar-free vanilla frosting or melt 2 Tbsp of Smucker's sugar free jam and drizzle it over the tops of the scones for other glaze options.
